Amazingly Easy Irish Soda Bread

Great recipe! It is a little biscuit like in flavor and texture, which made it all the better. Basting with the butter/buttermilk mixture is key - it made for a delicious crust. Thanks for a keeper.

Jalapeno Popper Mushrooms

These were really tasty! Rich, but good. I used Neufchatal (low fat cream cheese) and a serrano pepper - they were nicely spicy but not too hot. Definitely pre-bake the mushrooms as other users have suggested. These will be great on game day!

Clementine's Oatmeal Chocolate Chip Cookies

Great cookie! I did a combo of dark and semisweet chocolate chips, and skipped the nuts only because I didn't have any. I also did 1 1/2 cups of flour and 2 1/2 cups of oats, (simply because I misread the recipe) but it worked out great. Husband has eaten 8 since they came out of the oven :) Will make again for sure!

Maple Kale Crisps

This is the best recipe for kale chips I've tried. The sweetness of the maple syrup really balances the bitterness of the kale. Just make sure to remove from the pan before they cool or you'll never get them off.

Miracle Soup

Love it! I used beef broth (only because I was out of chicken broth) and didn't have any bamboo shoots on hand so I omitted them. I also used canned straw mushrooms, 1 whole serrano pepper in place of the crushed red pepper, and 1 teaspoon of agave nectar in place of the fructose. Also, I didn't have any shrimp so I substituted 1 package of tofu shiritake noodles. This was so tasty on a cold, windy fall night - spicy and satisfying. I'll be making this lots, thanks for a great recipe!

Sweet, Sticky and Spicy Chicken

Delicious! I could eat this whole batch of sauce with a spoon! I added a quick saute of carrots, green onions and snow peas. Will make again!

Zucchini-Chocolate Chip Muffins

Great recipe - so moist! I used 1/2 tablespoon of cider vinegar in place of the lemon juice (was out of lemons) and doubled the chocolate chips in place of the walnuts. I also baked as a loaf at 375° for 40 minutes. Fabulous, will make this again!

Buffalo Wontons

Wow - these are worth the calories! I used only 1/4 cup of butter, and it didn't hurt the final product at all. I also sprayed the wontons with Pam after stuffing, then sprinkled with kosher salt and baked at 375° for 15 minutes. Served with blue cheese dressing - fantastic, everyone really loved them! Next time I try these, I will combine the cream cheese with the chicken filling before stuffing the wontons. Great recipe, perfect for watching football!

Zucchini Chip Cupcakes

Delicious, moist cupcakes - my husband ate 5 in one sitting! What a great way to use zucchini. I also added 1/4 cup of white chocolate chips, and reduced the sugar to 1 1/2 cups. A keeper for sure - thanks for sharing!

Caramel Bars

Delicious! My husband loved these. I also doubled the oat mixture, and used about 2/3 on the bottom, the remainder on the top and pushed in well. I didn't have a problem with them crumbling. Also increased the amount of caramel by about half. Be sure to cut into smaller pieces, these bars are rich! Beware, these are addictive...

PHILLY Make-Ahead Spinach Phyllo Roll-Ups

These were good, much less fussy that making traditional Spanikopita. I made a few changes - sauteed a small onion with three cloves of garlic and red chili flakes, and used a full cup of feta, cut back on the cream cheese a bit. I also added oregano and thyme. A snap to make!

Pear Bread I

Fabulous quick bread! I made a few revisions to the recipe though. As others suggested, I reduced the sugar to 3/4 cup of white, and 3/4 cup of light brown. I also reduced the oil to 1/2 cup, and added two very ripe, mashed bananas. For the pear, I used 2 cups of pear purée, and also added 1 cup of white chocolate chips. It turned out fantastic - I will make this over and over again!

Cranberry Chutney I

This is an absoltely addictive chutney, with layers of flavor. I substitued craisins for raisins, and used two whole cinnamon sticks, 10 whole cloves, a nub of fresh ginger and a sprinkle of cayenne for heat. I also reduced the vinegar just slightly, but don't think that is necessary. Once the chutney sits and the flavors meld, the vinegar flavor really mellows out. I'm making another huge batch of this for Christmas gifts today!

Chicken Pot Pie II

really good - my husband loved it. i substituted 1/2 cup of condensed mild and 1 cup of milk with the broth - which made it creamy without being too rich. fresh tarragon would also be nice here - though i haven't tried it. great base recipe!
