Cocoa Oatmeal Cookies

I have a new favorite cookie recipe!!! I just made these and ate about 4 as I was taking them off the pans (ones in center of pan were extra gooey because I tend to under-bake cookies, so they kept breaking apart - but tasted SO GOOD)! Used 1 c. whole wheat flour and 1/2 c. white, and couldn't even tell they were "healthy." They were just right, chewy and chocolatey but not too sweet. Oh, I also used white chocolate chips instead of raisins because that sounded good to me. Thanks for a great recipe! Update: made them again with all whole-wheat flour, and couldn't tell a difference. Also chilled the dough before baking, and they came out a bit thicker. Last batch cooled on the pan because I forgot about them, and they came off in one piece even though they were under-baked - perfectly soft and chewy!

Mini Cheesecakes III

I made a single batch of these to test the recipe, before making 2 dozen to take to an event. The first ones came out perfectly - at 25 minutes I wasn't sure they were done, but took them out anyway, figuring if they didn't set up I could bake the next ones longer. They tasted great after cooling and chilling, so I made the bigger batch the next day exactly the same - only difference was I used foil cupcake liners instead of paper - and they were full of cracks after 25 min! The next pan I checked at 15 min, and some of them were already starting to crack so I took them out. So beware, if you try the foil liners, they cook MUCH faster - but they do look a little nicer (the ones that didn't crack!) since the liner doesn't get all soggy looking. Oh, and I left out the lemon zest because I didn't have fresh lemons on hand, and didn't want too strong a lemon flavor. Yummy, thanks for a great recipe!

Garlic Chicken

I love this recipe! The chicken gets crispy on the outside, but stays nice and juicy on the inside. And my kids even like it, most days! :)

My Amish Friend's Caramel Corn

This is amazing! I've made this several times and given it as Christmas gifts. It's so addicting we eat almost half of it just by grazing each time we walk by as it's cooling! The only changes I make are butter instead of margarine, and I don't think I've ever greased the pans - they clean up fine with hot water and sometimes a brief soak. Oh, and this last time I didn't quite have enough popcorn, so I found some Crispix cereal to pour the remaining caramel over - that was really good too, and actually safer to give my 2 yr old than popcorn! Thanks for a great recipe!

Tofu Chocolate Pudding

I wasn't expecting much from pudding made with tofu, but tried it because my daughter had a milk allergy... and it was really good! I use silken tofu, and I think the pudding tastes like chocolate mousse, so that's what I tell people I'm serving. They're always surprised when they find out it had tofu in it! :)

Peanut Vegetable Curry Wraps

I added chicken, which was tasty, but there were not nearly 8 servings! Also left the peanut butter out and just spread it on the tortillas before filling, because there was no liquid/oil left in the pan after cooking the veggies and I thought it might be too thick.

Lamb Masala with Jeweled Rice

We love this recipe! I've made it twice with chicken, and the only change I made is to omit the salt. The Garam Masala I bought has salt as the first ingredient(!) and it was too salty with the added tsp.
