Baked Pork Chops with Apple Raisin Stuffing

This was great with a few tweaks: I melted the butter on a pan and sauteed about 1/2 of a small onion (diced) until translucent (omitted the celery). Then I proceeded as directed except took another reviewers tip and substituted craisins for the raisins (I added about 3 TBSP). Next I seasoned the pork chops with Adobo and lightly browned them in a small bit of EVOO before adding them to the stuffing. Also, I used bone-in chops--they are way more moist and tender. Finally omitted the paprika and apple garnish. YUM!!!!!

English Walnut Pie

I have brand new oven, yet after 45 minutes, on 300, the pie was barely beginning to set. I increased the temp to 350 and baked 15 minutes longer.

Honey Oat Beer Bread

I'm sorry. I'm always the one that feels bad for the bad ratings...also the one that ignores the lonely bad rating which mine likely will be, but this was AWFUL! The beer made it very bitter (I used the Sam's Honey Porter that an earlier reviewer raved about). Maybe a milder beer is in order. Still I found it not sweet enough. Beer breads I've tried in the past have had a more sweet "aftertaste". I won't make this again.

Spiced Pumpkin Fudge

This was awesome! Such a nice change of pace from everyday chocolate fudge. The only suggestion I would have is to add just a touch more pumpkin pie spice. Otherwise, yummy!!!

Creamy Twice-Baked Potatoes

This was the first time I've ever made twice baked potatoes and I know I picked the right recipe! YUM! YUM! YUM! I did add the cheddar cheese and chives--normally I prefer to make a recipe as is the first time out and experiment later, but these are classic potato additions. You won't regret adding them! ...Update: Having made these a few times, I now save a step by just placing the mashed mixture into a casserole dish and baking that way. Sure, not quaint in appearance, but for busy cook's it's a tip worth using without losing the awesome taste!

Reunion Meatballs

SAUCE REVIEW ONLY: Needed a last minute addition to a "too-skimp" menu, but was pressed for time so I took a cheat and used frozen premade meatballs with the sauce in this recipe. The sauce was perfect and I got a lot of rave reviews--no one could believe I used frozen meatballs!

Sweet Potato Pie with Marshmallow Meringue Topping

5 stars for the pie itself if it were made in a regular crust. 1 star for the meringue topping. Sorry. Unless you are going to serve this immediately, the meringue with the marshmallows in it is just too chewy and sticky. Mine split also. Will try the pie on a regular crust with a regular meringue topping to see if I have any better luck.

One Bowl Brownies

THE BEST! So maybe I am strange, but have always prefered box mix brownies. I find homemade to be dry, but in desperation for a chocolate fix and no mix on hand, I gave these a go. No more box mix for me! These are great--no tweaks!

Citrus-Basil Vinaigrette

Absolutely perfect as is. This officially just became my new go to vinaigrette. Tried it tonight for a side salad, but this will be wonderful over an entree salad with avocado, cukes, red onion and grilled chicken. Perhaps a cilantro lime marinated chicken. I can't wait for summer!

Depression Cake I

Great recipe on this dreary day that just begged for baking but not going out to get eggs! Switched it up a bit by making a mixture of dried apricots (minced), craisins and raisins for the fruit and added the flour coated walnuts for crunch. My only suggestion is to add at least 1/2 teaspoon salt to cut the sweet just a bit. By instinct I added just a pinch, but it still could have used just a touch more. Otherwise a very nice spice cake...reminiscent of a fruit cake except MOIST and TASTY! :-)

Maple Dill Carrots

Am I the only person to notice these are called MAPLE Dill Carrots but there is NO maple in them??? As a New Englander I couldn't imagine these any other way!!! It's as easy as replacing the brown sugar with REAL maple syrup. For those finding the sauce runny, after you drain the carrots put them back on the burner to evaporate the excess moisture, then cook the syrup ingredients a bit to thicken. Try this with real (not that fake overly sweet stuff--sorry Mrs. B.) maple syrup and you will not be disappointed!

My Thai Chicken Wraps

Delicious...omitted the sugar (you do not need it). Already had thawed chicken breast out so I just cooked and shredded it, but I will try with rotisserie next time. Definitely a keeper recipe. Thanks!

Kielbasa with Veggies

This is a great, quick and easy meal for a dreary, stay inside kind of day. I didn't have frozen stew veggies, so I added fresh potatoes, diced small and fresh carrots, cut into small rings. Also didn't have beef stock or onion soup mix BUT, I did have a can of condensed french onion soup in beef broth which is essentially the same thing. Very tasty!
