Restaurant-Style Coleslaw I

There are only two coleslaws I really LOVE. KFC comes in first place with Bob Evans a close second. This tastes exactly like KFC!!! I made this the night before serving. I was going to hold off on putting the onion in until just before serving per another reviewers suggestion that the onion overpowered the slaw after an overnight stay in the fridge. I won't be adding the onion at all. It does not need it! Thanks Marsha! This is AWESOME!!!

Easy Key Lime Pie I

This was AWESOME! I made it with the 5 egg yolks, (it did not taste too "eggy" as some suggested) but did follow the recommendation for an extra 1/2 can of sweetened condensed milk. YUMMY!!! Don't add the green food coloring as others suggested...even one drop makes it look too fake!

Red and Sweet Potato Salad

This was terrific! There is always someone who has to make a "change". This time it was me. I am not a big fan of celery, so I swapped it out for one apple peeled and diced. It's an old treat my mom always included in her potato salad and adds a nice, surprising bite. It worked very well and the whole family raved and asked for the recipe.

Creamy Twice-Baked Potatoes

This was the first time I've ever made twice baked potatoes and I know I picked the right recipe! YUM! YUM! YUM! I did add the cheddar cheese and chives--normally I prefer to make a recipe as is the first time out and experiment later, but these are classic potato additions. You won't regret adding them! ...Update: Having made these a few times, I now save a step by just placing the mashed mixture into a casserole dish and baking that way. Sure, not quaint in appearance, but for busy cook's it's a tip worth using without losing the awesome taste!

Dixie Pork Chops

These were terrific! A great change from boring everyday pork chops. I seasoned my chops with adobo (an all purpose carribean seasoning) before frying. I added the cinnamon as suggested with the brown sugar and added the salt and sage to the sauce. Very, very, very good. Served to my husband after a three week military trip and he thoroughly enjoyed his welcome home meal! Even the kids ate it (although they picked out the raisins ;-).

Honey Oat Beer Bread

I'm sorry. I'm always the one that feels bad for the bad ratings...also the one that ignores the lonely bad rating which mine likely will be, but this was AWFUL! The beer made it very bitter (I used the Sam's Honey Porter that an earlier reviewer raved about). Maybe a milder beer is in order. Still I found it not sweet enough. Beer breads I've tried in the past have had a more sweet "aftertaste". I won't make this again.

Maple-Garlic Marinated Pork Tenderloin

This is terrific! Definitely use REAL maple syrup and add that soy sauce. Very tasty. I baked mine in the oven like others did. Huge hit at a dinner meeting.

Fudgy Chocolate Cream Pie

PERFECT as is!!! But...here is a Christmas variation: Instead of topping with whipped cream, why not try topping with a basic peppermint pie recipe. I'm going to give it a whirl for Christmas Eve. Christmas delight!!!!

Mouth-Watering Stuffed Mushrooms

Made these for our family Christmas party and they were a HUGE hit! Delicious. I bought two packages of mushrooms (more than 24) and there was enough filling for all without changing amounts. Topped with fresh crumbled bacon and minced scallions as suggested by another reviewer. Also added about 1/2 teaspoon of seasoned salt to the filling. Excellent!

Jimmy Dean Maple Sausage Waffles with Cinnamon Apples

Another Christmas breakfast success! I could not find maple flavored bulk sausage at my grocery and didn't want to use brown and serve, so I added two TBSP real maple syrup to the batter--worked just fine. Also I think a little less than half cup would work fine--maybe it was my waffle iron but it kept overflowing the iron. Finally, I made Emeril Lagasse's Apple Compote (canned filling...yuck). It was a smashing success!

Creamy Butternut Squash With Cinnamon Soup

This was absolutely DELICIOUS!!! I made it almost exactly to the recipe except I cut down on the spices: 3/4 tsp. cinnamon, rounded half tsp ginger, 1/8 tsp cloves and substituted fresh ground nutmeg for the cayennne. I didn't want it to taste like dessert and my gut feeling was right and my belly was happy! THANKS!!!

Baked Pork Chops with Apple Raisin Stuffing

This was great with a few tweaks: I melted the butter on a pan and sauteed about 1/2 of a small onion (diced) until translucent (omitted the celery). Then I proceeded as directed except took another reviewers tip and substituted craisins for the raisins (I added about 3 TBSP). Next I seasoned the pork chops with Adobo and lightly browned them in a small bit of EVOO before adding them to the stuffing. Also, I used bone-in chops--they are way more moist and tender. Finally omitted the paprika and apple garnish. YUM!!!!!

English Walnut Pie

I have brand new oven, yet after 45 minutes, on 300, the pie was barely beginning to set. I increased the temp to 350 and baked 15 minutes longer.

Korean BBQ Chicken Marinade

This was great, but I did make a few tweaks: 1 minced garlic clove, replaced the chili paste with hot chili garlic sauce (it's what I had on hand) added a bit of honey to sweeten it up and also a few drops of sesame oil. I did increase the hot chili garlic sauce to our heat liking. Very good!

Buffalo Chicken Fingers

This is 5 stars when following other reviewers tips: Replace the water for Frank's sauce and make the sauce with Franks and butter. Will take these over the top! Also, increase the amount of breadcrumbs to 1 1/2 cups. There was definitely not enough for all the chicken, and I even used 1 full cup.

Tiramisu Layer Cake

This was a HUGE hit!!! I took a reviewer's suggestion to double all the coffee and coffee liquer--DEFINITELY a must! I also made two coffee layers and one white instead of the reverse. This will definitely remain a go-to favorite!!!

Blueberry Cream Muffins

AWESOME! Followed reviewers suggestions for 1 1/4 c. each white and brown sugar, touch of nutmeg and cinnamon and added the streusel topping! Very nice with coffee.
