One Bowl Brownies

Reviewed: Dec. 15, 2010
THE BEST! So maybe I am strange, but have always prefered box mix brownies. I find homemade to be dry, but in desperation for a chocolate fix and no mix on hand, I gave these a go. No more box mix for me! These are great--no tweaks!

Kielbasa with Veggies

Reviewed: Dec. 12, 2010
This is a great, quick and easy meal for a dreary, stay inside kind of day. I didn't have frozen stew veggies, so I added fresh potatoes, diced small and fresh carrots, cut into small rings. Also didn't have beef stock or onion soup mix BUT, I did have a can of condensed french onion soup in beef broth which is essentially the same thing. Very tasty!

Depression Cake I

Reviewed: Dec. 12, 2010
Great recipe on this dreary day that just begged for baking but not going out to get eggs! Switched it up a bit by making a mixture of dried apricots (minced), craisins and raisins for the fruit and added the flour coated walnuts for crunch. My only suggestion is to add at least 1/2 teaspoon salt to cut the sweet just a bit. By instinct I added just a pinch, but it still could have used just a touch more. Otherwise a very nice spice cake...reminiscent of a fruit cake except MOIST and TASTY! :-)

These are perfect. I dip them in buffalo sauce and they disappear quick. Great non-fried recipe!

Emily's Famous Hash Browns

Reviewed: Nov. 26, 2010
Sorry. I don't know if it was me, but this just came out terrible greasy. I know I had the temp on my oil right, so I don't know, but I didn't care for this

Sweet Potato Pie with Marshmallow Meringue Topping

Reviewed: Nov. 26, 2010
5 stars for the pie itself if it were made in a regular crust. 1 star for the meringue topping. Sorry. Unless you are going to serve this immediately, the meringue with the marshmallows in it is just too chewy and sticky. Mine split also. Will try the pie on a regular crust with a regular meringue topping to see if I have any better luck.

BLT Dip

Reviewed: Nov. 26, 2010
This was a great change of pace from standard dips. I did add the 1/2 packet of ranch dressing mix. Will add a tad less next time, but it's a nice addition. YUMMY!

Tasty BBQ Corn on the Cob

Reviewed: Sep. 25, 2010
Pretty good for a switch. The recipe doesn't say how much compound to put on each ear so I had quite a bit left--just served it on the side for extra.

Mini Meatloaves

Reviewed: Sep. 25, 2010
This was great! My son who "hates" meatloaf ate two. I added a little bit of minced onion to the mix. I used a jumbo (6 count) muffin tin and they cooked perfectly in the time alloted.

Citrus-Basil Vinaigrette

Reviewed: Mar. 26, 2010
Absolutely perfect as is. This officially just became my new go to vinaigrette. Tried it tonight for a side salad, but this will be wonderful over an entree salad with avocado, cukes, red onion and grilled chicken. Perhaps a cilantro lime marinated chicken. I can't wait for summer!

Sausage and Egg Casserole

This was terrific and so easy to prepare before bed on Christmas Eve for my Christmas Day no hassle breakfast! I added extra eggs as one reviewer suggested to make it stretch to a 9x13 pan. AWESOME!

Candied Garlic Chicken Wings

Reviewed: Jan. 2, 2010
These have potential to be 5 stars, but not without some tweaks. I added the splash of vinegar that many reviewers suggested, but I still think the flavor was lacking--it was a little bland to me. The sticky and the sweet factor is spot on, and the cooking process was perfect, but something was missing. Maybe more soy sauce and waaaay more garlic, some fresh grated ginger and a drop or two of Sesame oil would do the trick. Not sure....

Chocolate Cavity Maker Cake

Reviewed: Jan. 2, 2010
This was just okay. I found it rather bland. Just chocolate cake with chips mixed in. The next the day the chocolate chips hardened giving it a funky texture. Sorry, not my favorite.

Cornbread Pudding

Reviewed: Dec. 12, 2009
AWESOME!!! I doubled this, added 4 eggs(because I doubled) and one stick of butter melted in casserole then mixed in. Cooked in 90 minutes exactly which makes me wonder if 90 minutes is a bit long for the original, undoubled recipe??? I might add just a tablespoon of sugar to the doubled recipe next time.

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Nov. 30, 2009
This was just okay. It tasted fine, but honestly, it didn't taste any differently than the traditional bread stuffing I make every year. I chose it for the sausage, but you could barely notice any sausage flavor at all. Maybe there should be more.

This was just okay. I found it to be too thick. I will try it again, but plan to add much more milk.
