Downeast Maine Pumpkin Bread

I made this as written except used 2-9X5 pans and baked for about 65 minutes. It may be the best pumpkin bread I've ever tasted! Only problem is I cant stop eating it:) ...I may try one of the healthier versions next time.

Grilled Bacon Jalapeno Wraps

These were great, and disappeared quickly! Something I didnt think about until I was assembling...dont remove the tops of the peppers! Need to leave the tops on or the cheese all runs out when it melts. Just slice the peppers lengthwise and then pull them apart at the top (the stem will stay on one side or the other). For ease, I baked them in the oven instead of grilling... 400 degrees for about 30-45 min, until bacon was done.

Cream Cheese Corn

I read a lot of reviewers who thought this was bland... but I liked this a lot as written, and my extremely picky children inhaled it! (I used salted butter so maybe that added some flavor) I always cook my veggies "al dente"...and just added the butter and cream cheese to melt. I didnt need to cook any further, and didnt want the corn to get mushy. Even though i liked as is, I think it would also be good with either some garlic salt, or some canned chilis or chopped jalepenos.

Prego® Now and Later Baked Ziti

This was very good and very easy...and I love having a second pan ready for another meal! I used 4 cups of cheese instead of 3 (2 in the mixture and 1 on top of each casserole). Next time, I might try 1 lb italian sausage/1 lb of ground beef instead of two lbs of ground beef. Could have used just a little more flavor.

Chicken Salad

this is exactly what I was looking for....simple and tastey! I left out onions, but added sliced almonds. served on a sandwich, w alfalfa sprouts and a slice of tomato. kids loved it!

EAGLE BRAND® Chocolate Fondue

DELICIOUS...and sooooo easy! I was looking for a simple recipe to make for my kids (I didnt think they would like liquer flavorings or anything "fancy")...this was perfect! I doubled the recipe and used Ghirardelli choc chips. Will definitely make again.

Awesome Slow Cooker Pot Roast

I included red potatoes, baby carrots, fresh sliced mushrooms and chopped onion (did not use onion soup mix). Added beef bouillon cube. Salted and peppered the roast before putting in crock pot. Very good....but hoped the gravy would've been a little thicker. Still, will definitely make again!

Prosciutto Wrapped Asparagus

Delicious! Will definitely make again! Followed the advice of others and blanched the asparagus for 1 minute. Put in ice water then patted dry with paper towels. Reduced baking time to about 10-12 minutes. Also used plain, softened cream cheese and (land o frost brand) smoked ham instead of prosciutto (3 slices ham per bundle of 2 asparagus spears). Also, sprayed the pan with olive oil and the tips of the spears (someone wrote to do that to keep them from browning too much). Yum, yum!

Broccoli and Cauliflower Casserole

This was delicious, I will definitely make again! I think I may make a little "healthier" next time by cutting butter in half (I dont think it would be missed), and using brown rice instead of white. (I love rice, so I doubled the rice quantity) Also, I think Velveeta has a new 2%, I may try instead of the regular. And, I used bags of frozen veggies...I think they were 14 or 16oz bags...but the increased quantity was fine.
