Baked Spaghetti III

pretty good...there's potential. I used a can of diced tomatoes (minus some of the juice)instead of just tomato juice and put the green pepper into the pasta instead of just on top and used a 4 cheese mix I had on hand instead of the mozzarella. Overall it was good, but i think next time I'll used a little less pasta, try it with mozzarella, use less onion (and i love onion), and add mushrooms into the mix as well.

Grilled Mushroom Sandwich With Citrus Mayo

This was awesome. You can't go wrong with a portobella sandwich. I've made them before but not with the citris dressing or roasted peppers. If you like it try marinating the mushroom in a teriyaki sauce...yum!

Buttermilk Parmesan Potatoes

They turned out really well...I threw in some sage and rosemary as well as used a whole lot more onion than called for-- love onion. I tented the caserole because I was afraid it would dry out, there wasn't alot of liquid. Don't do this...it took forever to cook and I didn't have big chunks of potato either. After the hour of cooking I removed the tent and let it cook for a good half hour more and there were still some harder chuncks. I will definitly make it again though, loved it.

this was pretty good...i love mushrooms and so had to add them, turned out great. next time i think i'll try it with italian dressing or a raspberry vinaigrette to try different flavors.

Veggie Meatloaf

it wasn't bad but i really didn't care for it per the recipe. if i make it again i'll put some spaghetti sauce into the loaf and top it with that instead of the ketchup. i think it was just a little dry for my taste.

Vegetarian Burrito Casserole

easy to make and really good! i didn't use the "meat" crumbles because of my husband so i just reduced the amount of taco seasoning i added to the tomatoes and it worked wonderfully--although i know the crumbles would have added a nice texture. --and it reheated well too:)

Barb-a-fu

It was quite yummy! I used a bar-b-que sauce with A1 in it and it was very tasty...I plan on trying different sauces to see what flavors I can come up with. Also, the coating was good but I think I'll saute it next time, I love a crunch on my tofu, this had it on the edges but not so much in the middle (I used extra firm tofu).

Blueberry Dump Cake

I've made it twice and it's been awesome. The first time I made it as stated and thought it was an awful lot of sugar and butter. The second time I made it I just sprinkled sugar and cinnamon over the fruit until I thought it looked good. I probably used 1/2 to 2/3 of the sugar. Also, I used frozen berries both times, the second time using a mixture of berries...turned out great, just had to cook for an hour. ...and I even used a lemon cake mix the second time too, it was so yummy!

loved it. made as directed the first time and then reduced the sugar ALOT for the next go around. Don't get me wrong, it was yummy with the sugar but if it's not needed I don't need it :)

it turned out ok with white sugar but when i made it with brown sugar it burned too quickly. maybe it would work better on a gas range but i have electric. i'll stick to a different caramel corn recipe i already have.

Tofu Salad

yum! A few alterations: I used 1/2 a head of red cabbage, a full block of tofu, a small bag of frozen snow peas (I sauteed them before adding to salad), spicy pepper oil instead of sesame oil, and no ginger. I pressed the tofu as was suggested and also sauteed it in a portion of the marinate. I doubled the marinate and mixed in over the cabbage and snow peas before adding the sauteed tofu. This is a new favorite for sure!

Creamy Mushrooms

so yummy! after reading a few other reviews, I didn't use a full 1/4c butter but I still think it was a bit too much. Also, some people said it was a bit bland, I thought it was awesome. I used soy milk so maybe that helped a bit, and I used 1 Tbsp flour and 1 Tbsp flax meal. Oh, and I also threw in some asparagus :O)
