Black Bean and Corn Salad II

This was really really good and everyone loved it. I wasn't able to add the avacado because it wasn't ripe enough and I was missing the bell pepper because they didn't look so good at the store. Reguardless, it was wonderful and I'll be making it again soon :)

Eggplant Parmesan II

This was awesome! It was so wasy and yummy and guilt free. I read a few reviews and figured I should sweat the slices. I don't have sea salt so I just used regular table salt -- I don't know if that was "right" but I rinsed and dried them off and everything turned out fine. I didn't bake them after getting them crispy, I just had them on the side with angel hair pasta covered with sauce and some cheese, turned out wonderful!

Microwave Caramel Popcorn

This should be illegal! I limit my consumption of caramel corn to the holidays because it tastes so good and takes a little work to make. This recipe is dangerous, not only is it tastey but it is easy to make and quick. I've made it a few times now and have taken some restraint by reducing the caramel to popcorn ratio. No specific amount, I just make about half the caramel recipe and pour it over lots of popcorn...I still get to munch on yummy caramel corn but it's "healthier" because there's only a touch of caramel instead of the blanket. :)

It was quite yummy! I used a bar-b-que sauce with A1 in it and it was very tasty...I plan on trying different sauces to see what flavors I can come up with. Also, the coating was good but I think I'll saute it next time, I love a crunch on my tofu, this had it on the edges but not so much in the middle (I used extra firm tofu).

Veggie Meatloaf

it wasn't bad but i really didn't care for it per the recipe. if i make it again i'll put some spaghetti sauce into the loaf and top it with that instead of the ketchup. i think it was just a little dry for my taste.

Baked Spaghetti III

pretty good...there's potential. I used a can of diced tomatoes (minus some of the juice)instead of just tomato juice and put the green pepper into the pasta instead of just on top and used a 4 cheese mix I had on hand instead of the mozzarella. Overall it was good, but i think next time I'll used a little less pasta, try it with mozzarella, use less onion (and i love onion), and add mushrooms into the mix as well.

pretty darn good:) i used fresh broccoli (don't ask how much--i just kept adding until i liked the broccoli to sauce look) and no butter. i was afraid it would be too dry but it all worked out!

it turned out ok with white sugar but when i made it with brown sugar it burned too quickly. maybe it would work better on a gas range but i have electric. i'll stick to a different caramel corn recipe i already have.
