Potato and Shiitake Mushroom Gratin

This was great as a side dish to steak. I used fat free half-and-half, a parmesan/pecorino-romano blend, and only shiitake mushrooms (only because I did not have any other types of mushrooms). The step involving boiling off the chicken broth from the mushrooms was surprisingly worth it as it added a layer of flavor to the dish. Next time I may try light cream instead of heavy cream.

EAGLE BRAND® Chocolate Chip Cheesecake

This is a great and easy recipe. The consistency was better than I expected and the filling was not too sweet. I did not make my own crust -- used store-bought chocolate graham crust. Use mini-chocolate chips and add after baking for 10 minutes as they will sink to the bottom otherwise.

Smokin' Scovilles Turkey Chili

Very tasty, hearty and spicy chili. I even used ground turkey breast and it tasted good! I did make a few changes -- I did not add the hot chocolate mix or the liquid smoke. I also didn't have chili powder so i subbed cajun spices, which made it very spicy so I omitted the hot sauce. Finally, I used chicken broth instead of beer. I'm not convinced it has to be simmered for 50 minutes.

Incredibly Cheesy Turkey Meatloaf

Very good basic recipe. I did make a few changes -- I added one chopped onion, fresh chopped garlic, and two teaspoons of poultry seasoning. I also used less cheese and worchestire sauce rather than ketchup. It came out very moist and tasty. I have always been skeptical of typical "american" food but I really enjoyed this!

Salmon Chowder

Very good recipe. I made a few alterations to the recipe. I omitted the carrots and celery because I did not have them on hand. I also used a red potato with the skin to give some color, fresh garlic rather than powder, and added cayenne pepper for some kick. I used low fat evaporated milk and low fat shredded cheese. Finally, I added some crumbled turkey bacon at the end. It was very good and my husband commented that it looked like a professional soup! Very easy weekday meal. To amend my previous review, the second time I made this, I found the canned salmon to be way too "fishy" smelling, turning off both me and my husband. I think fresh salmon is probably a must.

African Peanut Soup

I was excited about this recipe but disappointed in the results. There seemed to be something missing -- maybe more spices (cayenne? cumin?) would make this better. The only change I made was not using brown rice because I only had basmati rice in my pantry. Also, this recipe makes a HUGE amount.

Hot Spiked Cider

This is a great recipe for cider -- vary the amount of rum depending on personal preference and the butter garnish can be omitted. I make this quite often during the holiday season.

Guacamole

Great fresh guacamole recipe. Adjust seasoning to your liking. My husband gobbled this up. Make sure to use ripe avacados (I was idiotic enough to once buy an unripened avacado)!

Green Curry Thai for Kings

The best thai curry I've ever made. This works with red curry paste as well as green curry paste. The only change I made is using fish sauce instead of salt. The basil adds such a fresh flavor!

Middle Eastern Rice with Black Beans and Chickpeas

This is a good, healthy recipe that is a cinch to make. I would suggest using less tumeric -- it overpowers the dish -- adding extra cayenne (i like my food spicy!), and using much less broth (i use two cups of broth for one cup of rice). I don't think it's necessary to use two cans of the black and garbanzo beans. One can of each is plenty for one cup of rice. Finally, I added the same spices from the rice into the meat because otherwise it would be too plain.

Sicilian Spaghetti

I've made variations of this tasty dish before. The anchovies melt right into the garlic oil so there are no fish pieces left in the pasta. I suggest using WAY more garlic in the sauce and adding cilantro rather than parsley in the end. Also, I marinate and then saute some shrimp in lime, garlic, red pepper, and olive oil to add to the dish. Just a suggestion!

Yogurt Parfait

I've made this before using different fruits (my favorite is sliced strawberries) and fat-free vanilla yogurt. I suggest crumbling a granola bar, which can be low fat and any flavor (I use chocolate chip low fat granola bars), for the granola layer. This will help keep your ice cream cravings under control!!

Chocolate Chip Cheesecake

Admittedly, I'm a novice cook and have never tried to make a cheesecake before but I was somewhat disappointed in the result. The consistency of the cake was not as creamy or soft as I would have liked. It was a bit stiff and all of the chocolate chips settled to the bottom. Is this recipe missing an ingredient? Would sour cream help with the consistency?
