Honey Wheat Cookies

Fantastic recipe! I added half a cup of brown sugar that I creamed into the butter before I added the peanut butter and honey. Also used whole wheat PASTRY flour which made them unbelievably fluffy. Used wheat germ instead of bran. These are so good and nutritious, as cookies go. Not like I need an excuse of them being healthier to eat them, they are totally yummy!

Vegetarian Shepherd's Pie II

So good with my own adaptations! I made 2 cups of Not Chick'n bouillon, added 1 teaspoon of nutrional yeast, then cooked the lentils and barley in it until tender. I sauteed the onions in olive oil with 3 cloves of minced garlic, added the walnuts to toast, sauteed the carrots until tender, added about 6 diced button mushrooms, then added about half a cup of frozen chopped spinach, and half a cup each of frozen peas and corn. I then made a nutritional yeast gravy, and mixed it together with the lentil and barley and veggies. I made the mashed potatoes, added a thin layer of cheddar cheese on top of the veggies, then added the mashed potatoes. I then topped the potatoes with cheddar cheese, sprinkled parmesan on top of that, then sprinkled with paprika for added color and a light sprinkle of black pepper. AWESOME!

Apple Pie

Good recipe. The cooking temp was too high or the time too long, because my pie burned around the edges which was disappointing. The crust turned out a little too crunchy, but it was still yummy. I will make this again, and just keep a closer eye on it while it bakes.

Mom's Pie Crust

Great recipe, very easy to roll out! The only thing I did differently was to add a little more water so the dough would form a ball. This made making my own pie from scratch a snap...thanks so much for this great recipe!!

Striker's Potatoes O'Brien

Delicious! I need it right away, so I cubed the potatoes and while they fried up, diced up the peppers and onion. Added the onion when the potatoes were soft, cooked about 8 minutes, then added the peppers and cooked until they were crisp-tender.

Baked Oatmeal I

Great! I used applesauce instead of oil, and also added a splash of vanilla...why bake anything without vanilla, right? I also used dried blueberries instead of raisins. It was fantastic, and my 2 year old who is very picky gobbled it up. It was a little too sweet, possibly because of the applesauce and I did not reduce the sugar. Next time, I will use the applesauce and just half a cup of sugar.

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

This was great, using what I had on hand. I omitted the shallot and green onions, substituting one whole red onion roughly chopped and 3 minced cloves of garlic. I made sure to stem the chard, chopped the stems, and threw them in with the onion and garlic to saute up nice and tender. I used a whole can of garbanzo beans and 1 whole can of scantily drained garlic roasted tomatoes. Cooked all this to a simmer, and added the chard to wilt. After it was wilted, I used one tablespoon of lemon juice to sprinkle over it, and then tossed it. I put it in the serving dish, added a handful of grated Parmesan cheese, and stirred to combine. It was HEAVENLY. I will add more chard next time though, it looses a lot of volume when it wilts. Even my super picky 2 year old liked this dish.

Walnut Apple Dessert

This turned out very strange. The dough was to thick to spread over the apples, so I struggled to get it to cover the fruit layer. I cooked it for 40 minutes at 350 degrees, and the topping was burnt. I'm not sure what I did wrong with this, as I followed the recipe. If I make this again I'll probably add a couple of splashes of milk to loosen the dough up, and also watch it more closely in the oven. It smelled great, though.

Corned Beef Noodle Casserole

Ok, this was really yummy. I made a few modifications based on the fact the recipe seemed really bland. I added 1/2 tsp garlic powder, skipped the chopped onion and added 1 tbsp onion powder, 1 tbsp chili powder, and 1 tbsp prepared yellow mustard. So good, creamy and comforting!

Heavenly Shortbread

I did not care for this recipe! The dough turned out too crumbly, more like corn meal in texture, and the cookies were so bland. I even added some vanilla as other reviewers suggested, but they just taste like barely sweetened butterfat with a poor texture. What a waste of time and ingredients. I advise looking for another recipe...I sure am!

Chicken Enchilada Soup I

YUMMIES! This recipe was super easy and my husband and I loved it. I sauteed 2 chicken breasts in a skillet and pulsed them a few times in the food processors to get really nice shredded chicken, and I could only afford a big can of red sauce, so omitted the green entirely. I also added a can of cheddar cheese soup and a can of regular kernel corn, some paprika and ground white pepper. Served with shredded sharp cheddar and sour cream, and boy what a treat! I haven't seen my hubby dive into a soup like that EVER. I definitely recommend this recipe.
