The Best Banana Bread

Very good banana bread! Added about a tbls of some wonderful Mexican vanilla I have and a pinch of salt...My mom always says to use salt and baking soda together to assure an even rise. Also used butter...don't care for margarine! Used three large ripe bananas...don't like measuring! Took about 1 1/2 hours at 350. YUM! Making a second batch now!

Hugh's Dry Rub

I liked this rub however I used it as a base. I added 1 tbls of brown sugar and a tsp of dry mustard. A little too much pepper for my taste I think I'll cut that back the next time I use this. I also added a little cajun spice. Used it on baby back ribs with a sauce to baste...turned out pretty good. My picky nine year old even liked it and that's impressive.

Tiny Tarts

These are wonderful! I was leary when I read that the "crust" had no sweetners in it...but it complements wonderfully! I baked some for a cookie exchange and had my "tester" (my husband) try them...he immediately fell in love and bought me 2 more sets of mini muffin pans as a "gift". I had problems getting the little buggers out of the pan however and on the second and third batch sprayed the top lightly with cooking spray. The bottom or crust came out great but the top that spilled over stuck something wicked. GREAT cookie! A new holiday must! Thank you!

Favorite Old Fashioned Gingerbread

This was a fantastic recipe. Followed it to a tee except went heavy on ginger...1 tablespoon. Added a little extra of the other spices too. We like it spicy!! Added a teaspoon of nutmeg! Wonderful!!! The house smelled wonderful my husband said I have to make one everyday to make the house smell that good! My nine year old loved it too. Sprinkled it with powdered sugar and served it with whipped cream! This was my first gingerbread but I won't be trying any other recipes...this one nails it!! Easy, moist and delicious!

Cheater Pancake Syrup

My family didn't care for this much. I, being a nurse like to limit my families intake of corn syrup so I thought this would be a great substitute. They disagreed. I liked it fine...tasted very maple like. However, I agreed it was too sweet. I know that all syrup is just sugar and water....however the more you ate the more sweet it got. Totally overpowering the pancake. I like the frugality of the recipe however and the all natural ingredients.

Truck-Stop Buttermilk Pancakes

Very good homemade pancakes...however scaled it back like other cooks did...think it was the 4.8(so you don't have to perform algebra to get your eggs right. I used 2). Made a BUNCH. I can't imagine how big the original pancakes were! However, measured carefully still came out tasting the baking soda. Will use less next time. Nice pancakes...not too fluffy. I like them a little thinner. Thanks.

Tres Leches Cake

Made it for a coworkers birthday I wanted a change and it definately did give me that. It was hit and miss. The girl I made it for promptly req. my cheesecake next time. Another wanted the recipe and still raves about it! It was sweet and messy. Hard to make presentable. Maybe a home cake for family...would not take for others to present as a birthday cake. Serve with strong coffee to cut the sweet!

Banana Banana Bread

Good basic banana recipe seemed to be lacking some main ingredients though. I added vanilla (high quality) to the butter and sugar. Used 3/4 packed brown sugar. 1 tsp of cinnamon and 1/2 tsp of nutmeg. When all was said and done the batter looked too thick. Used 1/2 cup of applesauce to keep moisture and thin it down a little. About 40 min in to it...check for doneness. 1 hour is too long.

Flourless Peanut Butter Cookies

Yum! I don't know why I doubt you guys! It seemed too simple...delicious! Used 1 cup creamy JIF and 1/2 white sugar and 1/2 brown sugar. Came out great. Will sprinkle sugar on top of the next batch! Made 18 cookies, used the small melon baller from pampered chef! Can't wait for the boys to wake up to try the 2nd batch!

Gingered Pepper Steak

Mmmm! Quick and easy! Changed just a little. Added a large yellow onion to the peppers next time might add a pound of sliced mushrooms. I used a sirloin tip roast sliced thin instead of flank steak just because our flank steak was twice the price. The sirloin took on the flavor wonderfully and was super tendor! Served this over buttered noodles! YUM! My whole family loved it! Thanks!

Fabulous Foolproof Lasagna

My family loved it! Again added a little something to it! Cooked the noodles first just because I've had no luck with the no boil type. Also I added about 4 cloves of minced garlic to the meat as it browned for flavor. I added 1 box of thawed frozed spinach squeezed dry on top of one layer of ricotta (just to sneak in vitamins). I ended up using a bottle and a half of marinara sauce and extra mozzarrella. All in all very yummy and easy. Made enough for many left overs!

Strawberry Bread

Made this recipe twice. Used mini muffins and a loaf for the first go around. Yum. Only gave four stars because I made it again and used a bunt pan and this recipe turned out thick and heavy! Better in smaller baking portions.

My-Hop Pancakes

Yummy! My new fav. I had to substitute with skim milk and lemon juice in place of buttermilk. (Mine had a scary green fungus growing on it!) Let the milk sit with lemon juice for five minutes to sour. Cut back the canola oil a little and cut back the sugar by about a tablespoon. Mixed it up in Kitchenaid. My son is a pancake conosiuer...he loved these. Served with pancake staples of bacon and syrup. I'm so keeping this one. Used cooking spray instead of butter and canola oil instead of vegetable. Put in the fridge for 30 minutes.

Earthquake Cookies

Yum! Made a batch of these for Christmas presents...immediately had to make a second batch because the first may not make it out of the house! Used a small cookie scoop and made 2 1/2 doz. Baked for 10 minutes. They stay chewy like brownies. Easy, easy, easy!

Salsa Chicken Rice Casserole

Yummy! I used brown rice instead of white. Used 1/2 the amount of cheese (2% milk). I used medium heat salsa. Also I seasoned the chicken with chicken bullion seasoning while boiling. I had read the other reviews stating that this was a little bland so I tried spicing it up a little from the beginning. This turned out really good. Cheesy, creamy and filling. Y'all were right...it's better the next day. Maybe adding some fat free sour cream to the top right before serving would be good.

French Toast Bake

Yummy!!! This is very good. Easy to prepare and is now planning on taking center place on Christmas morning. Very sweet but in a nice way...Only four stars because of the recipe...it took me awhile to figure out that 12 day old bread...is actually supposed to read 12 PIECES of day old bread. Big difference...I kept wondering how you could possibly use 12 day old bread.

Sausage and Egg Casserole

Perfect! Easy, savory and comforting! Exactly what I was looking for in a breakfast casserole. This is one of those yummy feel good...not good for you breakfast items:) I'm sure you can make this low cal./low fat but seriously...what's the fun in that? Cooked up perfectly...just make sure to let it sit for 30 minutes after taking out of fridge and before putting in a piping hot oven.
