Corn Casserole II

Big Soft Ginger Cookies

These are amazing! I used butter instead of margarine...still soft and chewy...spicy and scream holidays! One dozen disappeared instantly. Made 3 dozen using a cookie scoop from pampered chef.

Double Layer Pumpkin Cheesecake

Yummy! Easy and quick to make. Wanted a change and made this as "practice" for Thanksgiving....this'll work. Light and tasty not too sweet. Keeper...thanks. Made exactly as written. Will probably go heavier on spice next time.

Best Ever Banana Bread

Shut the door good!!! Added applesauce no oil or butter. Added cinnamon, nutmeg and good slug of vanilla extract. Moist, delicious and GONE in one day....and I made two loaves! Added pecans to one loaf...didn't get to try it because it was gone so fast! I'm throwing my other BB recipes out...this one nails it! Also added 3/4 cup brown suar replacing 1/2 the white sugar.

Salmon with Brown Sugar and Bourbon Glaze

This is very sweet...the fish ends up with a nice flavor but resist the urge to add more sauce to the fish after cooking. Ends up tasting like candied salmon (if there is such a thing) on thin pieces of fish.

Stovetop Yankee Pot Roast

This is sooo good! Didn't change a thing! Everyone loved it...the recipe doesn't mention to salt and pepper the meat before dredging...so make sure to do that. I did change the order of cooking. Sear meat then take out of the pot...then carmalize the onions and garlic in the remaining oil add the celery to the last couple of minutes of carmalizing, add wine to deglaze the pan, add back the meat, add the carrots and broth, cover and enjoy. I made a 3# English roast and forgot about it...so cooked for four hours on accident...still very tender and juicy. this is my go to pot roast recipe now!

Pork Chop Veggie Medley

Super easy and really tasty! Didn't have the zuccini and corn but made with the onions and garlic and tomatos...I was skeptical about this being good, due to the simple ingredients...but it really turned out well!!! Tender chops and the onions and tomatoes make a tasty sauce that is delicious served over rice! Served with brown rice and steamed broccoli...next time I will use the other veggies! Easy weekday meal.

Fettuccini with Mushroom, Ham and Rose Sauce

Yum! Made this on a whim to try to pull together dinner. Really, really good. Here are the substitutions I made...I used baby bella mushrooms, doubled the garlic ('cause we love it!), substituted the cream for evaporated milk to cut back on fat and calories. It didn't specify what type of ham use so I had some nice deli ham in the freezer and sliced it up thin using an 8 ounce package. Good, Good, Good!!!! Used whole wheat spaghetti and served with whole multigrain garlic bread and parm. cheese. Oh...almost forgot...I read the reviews and did add 1/4 cup of light sour cream. It added a little zing! I chose to add the red pepper flakes and my boys raved!

Beef Stroganoff III

I hate it when people do this...but I changed this recipe quite a bit. Browned beef and onions with the addition of 2 cloves of minced garlic. Why in the world would anyone who enjoys food use canned mushrooms?? I added an 8 ou. package of sliced baby bellas sauteed in 1 tbls of butter and added at the end. Do yourself a favor and mix the flour in with the broth and "wisk" with a fork otherwise there are giant flour clumps in your future. Added a tsp of worcesteshire sauce to the browning beef. Increased the sour cream to 1/2 cup light sour cream. I used a tender piece of meat however, if you're using a tougher piece you may want to include the wine earlier as this not only enhances flavor...the acid helps to break down tough meat cuts and makes them tender. I chose dijon mustard as my prepared mustard because of it's wine content. Also I used a TBL of butter to saute the meat and one to saute the mushrooms. 4 ounces would be waaayyy to much! This is a solid three star recipe made as is...its a five star with the changes I have made.

Caramel Pecan Turtle Bars

Very good. Very sweet. Try to keep in the fridge as they tend to get soft and sticky at room temp. I cut them small 1 1/2 inch squares and that seemed to be the perfect amount for a sweet treat.

Roast Sticky Chicken-Rotisserie Style

This is delicious!!! I used this recipe exactly and baked (2) 4 lb chickens. I rubbed the chickens the night before and wrapped in plastic wrap until the next day. Baked at 225 and checked after four hours. They temped out at 180 after four hours so I covered until sides were done. Absolutley wonderful!!! Served with green beans and roasted sweet and white potatos!!! OMG amazing!!! Make sure to spice the inside of the chickens as well as the outer. Flavor went all the way through the meat. Lots of left overs! Made a giant chicken pot pie the next night!!! Next time I will make sure to rub the spice under the skin as we do remove this before eating. Keeper!!!

Sausage and Egg Casserole

Perfect! Easy, savory and comforting! Exactly what I was looking for in a breakfast casserole. This is one of those yummy feel good...not good for you breakfast items:) I'm sure you can make this low cal./low fat but seriously...what's the fun in that? Cooked up perfectly...just make sure to let it sit for 30 minutes after taking out of fridge and before putting in a piping hot oven.

French Toast Bake

Yummy!!! This is very good. Easy to prepare and is now planning on taking center place on Christmas morning. Very sweet but in a nice way...Only four stars because of the recipe...it took me awhile to figure out that 12 day old bread...is actually supposed to read 12 PIECES of day old bread. Big difference...I kept wondering how you could possibly use 12 day old bread.

Salsa Chicken Rice Casserole

Yummy! I used brown rice instead of white. Used 1/2 the amount of cheese (2% milk). I used medium heat salsa. Also I seasoned the chicken with chicken bullion seasoning while boiling. I had read the other reviews stating that this was a little bland so I tried spicing it up a little from the beginning. This turned out really good. Cheesy, creamy and filling. Y'all were right...it's better the next day. Maybe adding some fat free sour cream to the top right before serving would be good.

Earthquake Cookies

Yum! Made a batch of these for Christmas presents...immediately had to make a second batch because the first may not make it out of the house! Used a small cookie scoop and made 2 1/2 doz. Baked for 10 minutes. They stay chewy like brownies. Easy, easy, easy!

My-Hop Pancakes

Yummy! My new fav. I had to substitute with skim milk and lemon juice in place of buttermilk. (Mine had a scary green fungus growing on it!) Let the milk sit with lemon juice for five minutes to sour. Cut back the canola oil a little and cut back the sugar by about a tablespoon. Mixed it up in Kitchenaid. My son is a pancake conosiuer...he loved these. Served with pancake staples of bacon and syrup. I'm so keeping this one. Used cooking spray instead of butter and canola oil instead of vegetable. Put in the fridge for 30 minutes.
