Meg's Chocolate Chip Oatmeal Cookies

This recipe definitely makes more than 15 cookies as stated. I think we ended up with almost 32 cookies! WHAT I DID DIFFERENT: I added 1 more cup of oatmeal as suggested by another reviewer and put in twice the amount of vanilla. I ran out of unsalted butter so I added 1/2 c. salted butter. I also added about 1/4 c. of coconut flakes just for something extra. I think next time I will toast the coconut flakes first to add even more flavor. After the first batch I baked them for 23-25 minutes instead of 21 minutes. They came out crunchier on the outside but were still moist on the inside. My husband and daughter devoured the first batch before they even finished cooling. My husband isn't usually an oatmeal raisin person so I tried this one out and he said it was a "keeper". Easy Pancakes

I tried this recipe altered as others mentioned (less paking powder) and the original way. With less baking powder the pancakes are thin but with the original amount of 2 tbsp the pancakes come out nice and fluffy. I guess it depends if you like flat pancakes or fluffy pancakes. But the recipe is still pretty tasty whichever way you choose. I couldn't cook them fast enough for my daughter to eat... =)

Fried Ice Cream

I followed this recipe and even added the vanilla wafter crumbs. Unfortunately the crumbs didn't stick to the ice cream and just fell off when I fried it. Maybe my oil was too hot? The one (out of 15) that was eaten had a pretty good taste even though there weren't a lot of crumbs on it.

Spinach Roll-Ups

I substituted the sour cream with nonfat plain yogurt and replaced the mayo with fat-free cream cheese. Very yummy and light!

Tiny Pecan Tarts

I always make this for Thanksgiving with my family and only a half would make it to the table! =) My husband is allergic to pecans so I make them without and they turn out pretty good, too.

Cocoa Oatmeal Cookies

I have to admit we've NEVER had luck making cookies at our house so I was willing to try another recipe. This recipe was EASY to make and VERY yummy!!! Even my husband, who's not too fond of oatmeal cookies liked them -- he ate at least 5 of the first batch that came out. CHANGES I MADE TO THE RECIPE: I replaced the the raisins with 1/4 cup milk chocolate chips + 1/4 cup semi-sweet chocolate chips + 1/2 cup shredded coconut. If you follow the directions precisely, including the 1 min cool on the sheet then to the wire rack they come out great (even with the changes I made). Thanks for this recipe...it is definitely a KEEPER! =) I froze the leftover cookie dough and baked them this evening.....just as yummy as ever! I baked them for 1-2 minutes longer than normal since they were frozen. They came out perfect -- slight crunch on the outside and chewy on the inside!

Broccoli Chicken Fettuccini Alfredo

This is perfect for a fast, easy-to-make dinner and when you're craving the creamy Alfredo sauce. My husband isn't much of the Alfredo sauce eater but he'll eat this dish when I make it! You may want to adjust the milk and parmesan cheese portion to thin out the soup sauce.

Hot Cocoa Mix

I made Cocoa Cones for my daughter's teachers and my co-workers this Christmas and I found this recipe. My husband was the guinea pig and he loved the creamy taste from the powdered milk and non-dairy creamer. QUICK HINT: I combined all the ingredients in my stand mixer and let it mix together for a few minutes (that was for a 48 serving recipe).
