Slow Cooker Buffalo Chicken Sandwiches

Amazing recipe, and so easy -- definitely part of our normal dinner rotation! I tend to leave the cooker for closer to 10 hours, so I add chicken stock just to cover the top of the chicken (otherwise it dries out a lot). Awesome recipe!!!

Breakfast Sausage

Absolutely *delicious*! Didn't have cloves, so left that out, and substituted a little oregano for the marjoram. Turned out amazing. Frying took a long time, though, and obviously is not the healthiest -- I think next time I'll try broiling them, or using the George Foreman.

Chicken Divan

*UN*believably tasty. I made minimal alterations: I used one can cream of mushroom and one can of cream of chicken, and only about 3/4 cup light mayo -- think I'll cut that down to 1/2 next time since it had no shortage of creaminess. I also used about 2/3 of an 8-oz package of fresh mushrooms -- didn't bother sauteing before hand, and they were great. The water chestnuts really make it -- very nice crunch. My only really issue was that it seemed like not quite enough broccoli/chicken for a 3-quart dish... I ended up using a 2-quart dish and had sauce left over (although the dish had no lack of sauce).

Gourmet Mushroom Risotto

UNbelievable! i used only a half pound of portabellos to save $$ and a full pound of white mushrooms, and i think it was definitely fine without the extra half-pound. took me longer than anticipated (maybe 45 minutes for all the broth to be absorbed), but ENTIRELY worth it. highly recommended.

Downeast Maine Pumpkin Bread

really amazing! followed reviews and made the following alterations: used half unsweetened applesauce, half oil, used splenda for baking in place of sugar, used half whole wheat flour, and used 2 1/2 tsp pumpkin pie spice and 1/4 tsp cinammon in place of the spices. when i floured the pan, i also added a little cinnamon sugar, which added a slight sweet crunch. overall, turned out moist and delicious! my only complaint is that i wish it tasted more like pumpkin! i might try to use more pumpkin next time.

Linguine with Clam Sauce

WOW! very impressed, especially given how fast it went together! as some of the reviews suggested, i halved the oil, added 2 tbsp sour cream, and 1 tbsp cornstarch. i also used 4 cloves of garlic - can't go wrong with garlic. turned out amazing!

Real Homemade Tamales

great recipe! as first-time tamale-makers, we were a little afraid, but they turned out great! a few notes: -we used the premade trader joe's carnitas ($3.99 for 12oz) and had MORE than enough meat. i can't imagine if we'd had the entire 1 1/4 lbs! -even after soaking the corn husks for an hour, we still had problems getting them to stay folded - toothpicks worked great to keep them shut during the steaming. -the california chile was really mild - we think we'll try a spicier type next time. all in all, great recipe!
