Portobello Lemon Chicken

This recipe was awesome! I used bone-in chicken breasts, and put about 4 coarsly chopped garlic cloves in with the mushrooms and onions. It was simple and a big hit!

Classic Bran Muffins

This recipe was great! I substituted applesauce for the oil, and 2 tbsp honey + 1/4 cup white sugar (I didn't have brown sugar). I also used egg whites for the egg, and all whole wheat flour. I made 16 muffins, and they are each only 1 Weight Watchers point, for those counting. I will definitely make these again!

Apple Cake VII

This cake is delish! So moist! I only made 1/2 the recipe and put it in a small bundt pan. I used 1/2 whole wheat flour, cut out the brown sugar and used only 1/2 cup of white sugar. It was very sweet with only 1/2 the sugar, I would never use the full amount of sugar. I did not shred the apples, just left them sliced. It was great, I will definitely make it again!
