Roast Pumpkin and Feta Risotto

Superb!! So smooth and creamy yet without any cheese in the risotto!! I added a whole clove of fresh garlic. Will definately make again!

Meaty Thick Man Chili

I followed the recommended changes... 1) cut meat portion in half, 2)used chili powder to taste, not the called for amount(ie lots less) 3)added all the veggies I could think of to add... including all colors of bell pepper, mushrooms, zuchini, and 1 can diced tomotoes. 4) topped with cheese and sour cream. SO YUMMY!!

Potato Leek Soup I

Yum. And so so easy to make. Loved the wine with the leeks. Very good flavour. I also added garlic with the leeks, and used cheddar cheese on top when it was done. mmmmm.

This dish was amazing. I followed the recipe quite closely, and it was great. Even better the 2nd day with more of the ham flavour coming through. Highly recommended.

No-Cream Pasta Primavera

Delicious and so healthy. I added a cup of cheddar (American) or tasty (if you live in Australia) cheese to the recipe and threw in parm instead of romano because of what I had on hand. It was absolutely beautiful.

This dish is so healthy and delicious. I used butter to fry up the veggies, and totally drown the finished product in feta... mmmmmmmmm... delicious!

Summer Lasagna

Followed the recipe exactly, except changed cottage cheese for ricotta. This didn't even turn out too watery for us (I used a totally huge zuchinni, rather than 5 little ones!) Will definately make this again. YUM!

Black Beans with Bacon

This is a very tasty dish. I do, however, feel it is a little heavy on the onions. Either doubling the beans or halving the onions would make it better in my opinion. I also added the cumin, as one reviewer recommended, and liked that flavor, too.
