Beef Tenderloin Asturias

We loved this. We found the calabres cheese at the Spanish Table and, while we were there, picked up a couple bottles of Spanish red (a Rioja and a Ribera del Duero). They were both good matches. But we kept gravitating toward the Rioja, which had been too much wine the night before with the Pollo al Ajillo (also on Allrecipes) -- the Ribera was the better match with the chicken.

Pollo al Ajillo (Chicken and Garlic)

Wow, this was delicious! At the end, we pulled the chicken out of the skillet and browned it skin-side-down in olive oil and reduced the sauce a bit. We threw in some red pepper flakes, too. We've tried this with two Spanish red wines: a Rioja and a Ribera del Duero. Sarah and I agree that the Ribera del Duero (ours was 100% tempranillo) was far and away the better match. Looking forward to pairing the Rioja with the Beef Tenderloin Asturia recipe (from this site) tomorrow!

Sizzling Sherry Shrimp with Garlic

A terrific tapas. Quick, easy, delicious, using only a few ingredients that work beautifully together. Drank a Spanish white wine from the Basque region, Xarmant Txakoli. It's a fresh, bright, lowish alcohol white that's slightly effervescent. A great complement for this.

Excellent. A terrific starter or lunch. Full of flavor. Quick and easy to make with a few great ingredients. This is the way to cook and eat! I love it! We drank this with a Spanish white wine, Xarmant Txakoli (It's Basque. It was a nice wine. But better by its nature (bright, fresh, slightly effervescent, lowish in alcohol) with the Sizzling Sherry Shrimp with Garlic (also on Allrecipes). Next time I'll try a wine that's a little richer with this one.

Turducken

The Turducken was tremendous, and less work than we anticipated. The butcher boned the birds, which, unless you're Jacque Pepin, is the only way to go. It's your typical thanksgiving turkey, only thrice as nice! Actually, nicer still b/c with the birds all boned, the potentially destructive art of carving is removed: you slice straight through the layers of poultry and stuffing. It's like rouladen or a yule log. The ONLY downside: the price. We got ours at WholeFoods, and the pricetag really put the po' in poultry three ways. Leftovers for days, though. I would NOT drink red burgundy or Oregon Pinot Noir with this again. It was better with a bolder wine: Exceptional with a Spanish Ribera del Duero.

Coq au Vin alla Italiana

Delicious! we hit the farmer's market for this one (locally made sausage, foraged wild shrooms, and local chicken). the chicken is very tasty, so we blew off the poultry seasoning. we celebrated this recipe's Italian and French influences by opening a bottle of barbera and a bottle of vacqueras! we put the bright and spicy barbera in the dish, and then had some of each wine with the meal. the vacqueras might have been just a bit better, even though the barbera was in the dish. but either way, you can't go wrong. Tremendous, memorable meal! Grazie et merci, Richard!
