Moist Garlic Roasted Chicken

Reviewed: Oct. 9, 2012
Very moist chicken; however, I did have some trouble with the baking time. I did have a larger bird (~5lbs) so after 1.5 hours, I increased the heat to 375F and also opened up the parchment sheet for about an hours time. Amazing. Also used whatever herbs I had on hand. Stuffed it with celery, carrot greens, two heads of garlic, and lots of seasoning. And added some nubs of ghee on top of the bird during the last hour of cooking. Thank you for a great alternative to turkey for this past Canadian thanksgiving! Boyfriend loved it.

Lola's Horchata

Reviewed: Aug. 27, 2012
Made this using another reviewer's suggestion of halving the sugar (also subbed agave for refined white sugar) and grinding rice and cinnamon sticks beforehand. Best to soak it overnight. Amazing.

Melt In Your Mouth Blueberry Cake

Reviewed: Jul. 29, 2012
Not bad, but it needed...something. I added turbinado sugar on top before baking. I think it needs some lemon zest to "brighten" up the flavour a bit. I do like how subtly sweet it is though. Yum! Baked mine for 30min.

Rhubarb-Raspberry Crunch

Reviewed: Jul. 29, 2012
Awesome. First time cooking with rhubarb and this was a fail-proof recipe. I did substitute chia seeds for the tapioca and whole wheat flour for the AP flour. Also doubled the topping. Baked in a 9x9 but as per other reviewers, I still would double the fruit. Also cut down the white sugar as well... so sweet! Added lemon juice from half of a lemon to cut the sweetness.

Mediterranean Lamb and Lentil Stew

Reviewed: Jul. 29, 2012
Awesome. First time cooking lamb in a stew and this was the bomb. I omitted the chicken broth and lemon altogether because there was already too much liquid. I did add one beef bouillon cube and simmered it uncovered to reduce the liquid. Also added rosemary. Great over brown rice.

Blueberry Oat Bars

Reviewed: Jul. 10, 2012
Pretty good! Made a ton of substitutions (made my own blueberry chia jam, half white/brown sugar, 2 cups oats, 1 cup flour, 1 cup butter, added 2 tsps cinnamon). Needed to be refrigerated to firm up a bit but excellent taste! Loved how this wasn't too sweet. Thanks!

Rosemary Shortbread Cookies

Reviewed: Apr. 14, 2012
Really good. Can't go wrong with shortbread. I did make a few adjustments: used 1 tbsp of fresh rosemary (all I had on-hand), the zest of 1 lemon, and subbed 3/4 of the AP flour with whole wheat. Delish. My manager loved it! Thanks for the recipe.

Chocolate Crinkles II

Reviewed: Apr. 3, 2012
These were okay. Yes, they were a cinch to make but I think it's seriously lacking something! Definitely needs more chocolate flavour or a kick of espresso. I'd probably add something to enhance the chocolate flavour (ie. chocolate ganache or nutella thumbprint, melted chocolate to the batter, 2 tsps of instant espresso). Good base recipe though with room for improvement.

Roasted Balsamic Cauliflower

Reviewed: Jan. 22, 2012
This is such an addicting recipe. I practically ate 3/4 of a head of cauliflower just this morning/afternoon and baking two more batches in the oven right now. I used balsamic cream which is creamier, thicker, and a tad bit sweeter. Delicious when baked. Thank you!

Robust Garlic Baked Chicken

Reviewed: Jan. 10, 2012
Good base recipe. Did this with 4 boneless, skinless chicken breast with grapeseed oil, sage, minced garlic, salt, pepper marinade. Baked for 40min at 350F. Nice and juicy. Thanks!

Pasta de Sardine

Excellent! Used one can of sardines in soy oil and one can of sardines in tomato sauce. Added two fresh tomatoes, some basil, onions, garlic, and a dab of tomato paste. Super quick. Thanks!

Blueberry Cream Muffins

Reviewed: Aug. 26, 2011
Judging by this recipe, I knew that it just wouldn't rise. I added 4 tsps of baking powder and upped the baking soda to 2 tsps. Also subbed one cup of sugar for brown. Also added 2 tbsp of ground flax seed. It was good -- just your standard blueberry muffin but, in my opinion, needed a kick. I probably would add cinnamon or spices or possibly some lemon zest to freshen it up a bit. I would probably also add 1 extra cup of blueberries to the mix too. Good recipe though.

Black Bean Brownies

Reviewed: Jul. 18, 2011
Good base recipe but looking at the recipe (and previous reviewer responses), I can already tell how bland it would be. I did 1/3 of the recipe and used about 1.5 cups black beans, 2 oz of semisweet chocolate (melted), 1/3 cup of olive oil, 1/3 cup blue agave syrup, 1 egg, and 1 tbsp of cocoa powder. Baked for 45 min and it was delicious.

Banana Banana Bread

This was pretty good. Used 4 frozen bananas. Kept checking throughout the baking time and took it out at 1 hour. Little dry and burnt. Would like to revisit this recipe with fresh.

Slow Cooker Beef Roast

This is super good. Used a 5lb roast with 1/4 Worcestshire, 3/4 BBQ sauce and 1 cup water. Slow-cooked for 7.5 hours. Will probably cook for 6-6.5 hours next time. Thanks! Mom loved this.

Healthy Living Cheesy Smashed Potatoes

Reviewed: Mar. 4, 2011
This is great! I, like other reviewers, used more cauliflower than potatoes. I also omitted the sour cream and subbed it with some milk to make it lower in fat. Definitely needs some salt and pepper though.
