Mexican Rice III

For those who are looking for a basic mexican rice recipe that is similiar to what you enjoy from a restuarant or dare I say it "a box" then THIS is exactly what you are looking for without all the preservatives. After attempting several different mexican rice recipes THIS is the one that I'll put in my recipe box to keep. Thanks ALANASMOM!

Coconut Cream Pie IX

This was VERY dense. I made two pies at Thanksgiving, this one and a Coconut Custard and my Custard was lighter and fluffier than this recipe. It tasted good but it just isn't what I think of when I think of coconut pie.

Pull-Apart Garlic Buns

WONDERFUL!!! I substituted fine ground whole wheat for half of the flour! It was wonderful. Best rolls I have ever had. We dipped ours in the leftover butter sauce!! Think I will make these 3 times a week! I didn't have 2 tbsp. shortening and so I used vegetable oil. It turned out great! Instead of putting them in the rectangle pan I put all "12" rolls in a 10 inch cake pan. You can get "12" tiny rolls out of this or 8 heartier ones.

Chicken Florentine Casserole

Wonderful! My husband said, "This is a KEEPER" I used frozen spinach and I thawed it with warm water first. I ended up without mushroom soup so I used a heavy white sauce to substitute for that and it was STILL excellent.

Grilled Buffalo Wings

I gave this recipe 4 stars for one reason only. The claim is that they are better than fried wings. If you are a die hard fried buffalo wing fan there is a big difference between frying and grilling. However, this was an excellent recipe for the bbq grill.

Leah's Chicken Soup

This made great chicken stock and was pleased with the over all result but the dill added a "mystery" flavor that I didn't care for. Next time I will leave out the dill.Okay...I have to add on to my review. If you are looking for a soup that will kick a cold than this is the recipe...DILL and all...I boosted mine today with a some fresh garlic since we all have the coughs - this soup does the trick when you feel sick!!!

Cake Mixes from Scratch and Variations

I followed the suggestions of others and used oil instead of shortening. I also used cake flour (a.k.a. soft wheat). The cake was light and moist and didn't taste like preservatives which is a plus in my book! It could be a little sweeter but than again I don't mind cutting back on my sugar either. I WILL be making this recipe from now on.

Connie's Zucchini "Crab" Cakes

We loved it - but due to a communication error my son grated cucumbers instead of zuchinni for this recipe. (That was why it took more crumbs than it should LOL!) We look forward to doing it again with zuchinni.

I substituted balsamic vinegar and me and the children really liked it...but the husband thought it was disgusting. Beware the garlic breath....I love garlic but think it would be good with less.
