Janet's Rich Banana Bread

Made them into cupcakes. Forgot how long I made them for. Added about 1/2 cup of regular sized chocolate chips. Had great reviews! The cupcakes were moist and tasty.

Yummy Sweet Potato Casserole

Had great reviews and the dish came back empty. I was worried that there was too much sugar in the dish but it turned out fine. The crunch and flavor from the pecans gave it a nice balance from the sweetness. I toasted the nuts. Not sure if it makes much of a difference. Some reviewers said they suggest doubling the topping recipe, but for me I didn't double the topping and it was plenty enough. I also used 2 types of sweet potatoes: Japanese yams and sweet potato. The Japanese yams were favored over the other. Have been requested to make it again for Christmas. Plan on using Japanese yams instead.

Whipped Cream

I don't think I care for vanilla extract in my whipped cream. Or is there a specific brand that makes this recipe better? Will likely omit the extract next time. The whipped cream was very light and fluffy. Had leftovers in the fridge. The next day I checked, it had separated into liquid and solid. Yuck. Do all whipped creams do that?

Red Velvet Cupcakes

This is a good red velvet cupcake recipe. Tasted good. The cake was light but could be a bit lighter. And even with a whole 1 oz bottle of food coloring, the cake was still dark and not a bright red color. I'm willing to sacrifice color if that slightly extra cocoa flavor adds an extra yum factor to the flavor. Would have to try other recipes to find out.

Cream Cheese Frosting II

Good taste with a dense feel. Easy recipe. Definitely holds it's shape. And definitely feels and tastes sinful. Would use this recipe again if looking for a dense cream cheese frosting.

Parmesan Asparagus

Tastes good and was very easy. Doesn't work w/ every dish. Made it as a side for a lemon chicken, which didn't seem to pair up well. Thought the lemon in common would've made the pairing work. Novice at work.

Florida Strawberry Muffins

Muffins looked pretty. Topped off w/ cinnamon streusel. Used lots of fresh strawberries which made the inside very wet and mushy. The muffins that had more batter than strawberries seemed moist yet still harsh down my throat. Others raved that these were good, but I think they were talking about the top of the muffin w/ streusel. I'm off to try a different recipe and to get a muffin top pan! My DD loves muffin tops.

Fluffy White Frosting

The frosting held up and looked exactly as it does in the picture. I'm afraid I just don't like the final product of fluffy frosting though. It's a bit like eating sugary foam: a bunch of air and bubbles, which is great if you like that stuff. I gave it 3-stars because the result of using this recipe makes a frosting that looks good and holds it's shape nicely. But taste-wise, it's bleah.

Broccoli with Garlic Butter and Cashews

This was pretty good and was sooo easy to make. I didn't have white vinegar and substituted it with cider vinegar. I think that most, if not all, ingredients in this recipe should already be in almost everyone's cupboards. This time all the ingredients were already stocked at my home. I would definitely make this again.

Whipped Cream Cream Cheese Frosting

I liked the taste. It was lightly sweetened, smooth and a hint airy with a strong enough dose of cream cheese. I felt it was fairly easy to make too. Initially, the frosting was grainy from the granulated sugar, but keeping it in the fridge for a day or two smoothed it right out. I was also told that the frosting was really soft when in room temp but really hard out of the fridge. (I only made and ate the frosting. Didn't frost it.) Here's a tip, if you can, whip the whipped cream while making the cream cheese mixture because it took a while for the whipped cream to whip. But keep an eye out for it! I would definitely make and eat this again.

Chocolate Frosting II

This recipe was a disappointment for me. It was more work than worth it. Be forewarned, you are working with chocolate dough. It was an understatement to call it thick. Wheew. I worked up a muscle, and I didn't even use all the powdered sugar. The electric mixer was preoccupied. I would definitely use the mixer if I was to make a dough. Also, I wouldn't make this again next time. I love fudge on my ice cream but I guess I don't care for regular fudge you eat with your hands. It tasted like fudge but I just didn't care for the taste. Seemed too sweet for me, and, like I said above, I didn't even use all the powdered sugar. I guess I would just like it slightly darker and more chocolatey. I think I'll try to find another recipe on this site. I also gave it more credit because my friend liked it.

World's Best Lasagna

The guys especially love this recipe because it's so meaty. The flavor itself is very good. It does take quiet a while to make this and I have lots of meat sauce left over.

Oatmeal Raisin Cookies IV

These were alright. Nice aroma. Would've liked the cookies to have a crunchy outside. I reduced the recipe to 12 cookies, omitted the white sugar, and reduced the brown sugar to 1/4 cup. It was just the right sweetness. Also left out the nuts. My dough was quite sticky. It may've been because I used less sugar and I made sure to use completely softened butter. I left it out for as long as the raisn-egg mixture sat.

Mike's Favorite Grilled Cheese

Easy and good. Placing the butter on the bread first made the grilling less messy. The only challange is making the flip. I've made it twice and the cheese has never melted enough to stick to the top of the bread. You'll also need to watch out for the bread 'cuz it browns fast when the heats up.

Cinnamon Toast

I just like this recipe 'cuz it's easy and for nostalgic reasons. (The last time I had this was in *pre-school*. That was some decades ago. I won't bore you with numbers. ;)) I really didn't follow the instructions exactly so that may be why it wasn't noticebly great for me. Though I didn't veer off too far. The first time I toasted the bread too long, until it was lightly brown. Wrong move. The cinnamon toast turned out too crunchy. The second time I slathered thin slices of butter over it. Not thin enough 'cuz it was way too much butter. Whoops. The third time I just placed a few thin slices of butter on the bread, heated the bread up to soften the butter, then spread the melted butter over the rest of the uncovered parts of the bread. This version was much better. When I sprinkled the cinnamon-sugar over the buttered toasts I just stuck them back into the hot toaster to blend w/ the butter so it didn't have the granular look from the sugar. Next time I'm going to turn the heat back up to glaze the top. Maybe that'll turn out better.

Roquefort Pear Salad

Everything put together made a pretty good salad. I especially love the pecans. Those were yummy. I wasn't sure what type of flavors I got from the dressing though, but somehow it worked well with the salad. My husband really loves this salad. I used pre-cut and pre-packaged greens, crumbled blue cheese, dijon mustard for the dressing, and nixed out the avocado, garlic, and green onions. Less work. Overall I liked it but there just seemed to be something missing. Some pizzaz. I guess I was expecting the dressing to kick my taste buds a little more. How do I fix that? More sweet? More tang(y)? I'll probably use a little less olive oil next time too.

Cinnamon Sugar Biscotti

The biscotti was crumbly, and sprinkling all that cinnamon & sugar was messy, but...I don't care! I made biscotti! This was easy and it was good. Especially with coffee. Yum. It wasn't too sweet nor hard like I thought biscottis were like. And I had all the ingredients in my cupboard so i didn't have to go out to buy special ingredients. Nice. I may opt to use less flour or add more fat next time so it doesn't fall apart so easily. At least I think that may help. Though the dough itself was sticky enough as is.
