Slow Cooked Ham and Potato Chowder

I absolutely loved this! I really get tired of leftover ham. Ham is too salty for me to want day after day so I'm always looking for leftover ham recipes. This one hit the spot. My 3 year old ate it too so you know it's good. Thank you!

Turkey and Quinoa Meatloaf

I really liked it and frankly am surprised by the less positive reviews. It's healthy, easy to make and my daughter really liked it. I made it exactly per the recipe, and (against my nature) formed it into a loaf and putting it on top of a foil-lined sheet instead of a loaf pan and found it tasty and not at all dried out as others have said. (Now, if I had used a normal sized loaf pan dryness may have been a problem because it wouldn't have filled one fully) The only complaint that I have with the recipe is I think less brown sugar would be a good thing. I don't really think meatloaf needs 2 tablespoons but that's just me trying to be healthy.

Maple Salmon

I make this a lot. It's great ;) Everyone should try it and if you want to do it a little healthier get the Alaskan salmon instead of farm raised.

Haddock Au Gratin

I tried this dish out on my husband and we gave it 3 stars only because it seemed to be missing something. The sauce was a great consistency would go well with other things like crab. But next time I will add more onions, maybe some more mustard and will perhaps spice the fish with seasoning before baking with the sauce. It definitely warrants another try.

Eggplant Parmesan II

I loved this! Seriously awesome. I always thought I hated eggplant but I was so wrong. The finished meal was delicious but apparently eggplant isn't supposed to be chewy although I didn't mind that, better than overcooked and soggy really, (I'm reading reviews here after the fact) so perhaps I will bake the eggplant like 7 minutes per side at a higher temp like other reviewers suggested. (I did the first bake 10 minutes like the video suggested and 25 minutes for the assembled meal since I only cooked one eggplant instead of 3.) Anyway you slice it, it was good. I also added FRESH basil which I think makes a difference and smells divine when cooking. Thank you Doery!

Chicken Marsala Florentine

LOVED IT. I did not use the Holland House brand Marsala though. I used a quality brand and I also added sherry and capers. So Marsala it wasn't but whatever you want to call it doesn't matter. Yum. The second time I made it I didn't have roasted peppers and I truly believe that step is significant. So with just a little tweaking this is a fantastic meal.

Chicken Marsala

Made this twice. Loved it both times but this second time I decided to add capers and sun-dried tomatoes. I also thickened the sauce a tiny bit with a bit of cornstarch mixture.The only other change I made was I cooked the chicken then removed from pan as it was done. I did not simmer it on the stove with the sauce but added the reduced sauce later on top. YUM!! Note: Holland House brand Marsala is really not a great Marsala I have learned. I would suggest a more drier Marsala wine with less preservatives and salt.
