If I could save only one recipe for the rest of my life, it would be this one. I make these once every couple of weeks. They can be tricky, they always seem to turn out differently from batch to batch, and it seems like the more humid it is outside, the flatter the cookies turn out. I've found that well-chilled (but not frozen)dough and chilled cookie sheets help, as well as whipping the eggs really well, and smaller cookies tend to look nicer. I've never rolled them, just spoon-dropped them which saves a lot of time and they turn out fine. I've used many different chocolate combinations and none have disappointed. My husband prefers them flat because then he can squish two together, fold them in half, and shove the whole shebang in his mouth. I spread nutella on two cookies and ate it like a sandwich once, and I'm pretty sure I had an out-of-body experience. BEST. COOKIES. EVER!!!!!
