Tomato Basil Soup I

I am only giving it four stars because I have a few suggestions that I think would make it a five star recipe. First I added a peeled and cubed potato and 1/4 cup cream. Then I blended it with the smoothie blender. It comes out very creamy with a nice thickness to it because of the pureed potato. I also might use vegetable broth instead of chicken next time.

Brie Cheese Appetizer

I made this as an appetizer when we had some friends over and it was a huge hit! I served it with Ritz crackers and everyone raved about it. Just a few suggestions: DO NOT FOLLOW THE ADVICE TO FREEZE THE BRIE! I did this and I couldn't have cut it straight if my life depended on it. It is much easier to cut just plain cold from the frig! Also, I couldn't find a Brie wheel at the store, so I had to buy a wedge. If using a wedge of Brie all you have to do is cut it in half (not length wise, but like you are cutting the narrow end off a triangle) and put the halves side by side in the pastry to make it like a square of brie. That makes it easy to fold up inside the pastry if using a wedge.

Twice Baked Sweet Potatoes with Ricotta Cheese

I made these for Thanksgiving and a few times since then. They are a nice change from the traditional sweet potato casserole. I still made a few adjustments to make them a little more Italian to complement the ricotta and parmesan. Instead of the sage, ginger, and brown sugar I added oregano, thyme, and rosemary. My husband loved them and he's not a big fan of sweet potatoes.

Rich Italian Sausage and Potato Soup

This soup was amazing! It was really easy to make too! I substituted some black forest bacon for the pancetta and added an extra slice. I accidentally added 1 cup of cream instead of 1/3, but it probably made it even better!

Beef 'n' Black Bean Soup

I liked this recipe, but my husband thought it was a little bland. I didn't have any celery so I used green beans instead. I think this a good base recipe that you can tweak and make your own. I thought it had a nice flavor and because it wasn't too spicy I fed it to my one year old who loved it too. This went nicely with some shredded cheese, sour cream and cornbread.

White Chili with Chicken

I combined this recipes with another I found for white chili. Instead of the jalepeno I added a 4 oz. can of chopped green chiles. I also substituted one can of northern beans with one can of garbanzo beans and added a can of corn (drained). I liked this recipe because it called for the lime juice. I served this with sour cream and shredded colby jack cheese with a side of cornbread and my company loved it!

Spinach Chicken Parmesan

This was really good and really easy and quick. I added about 1/2 c. sour cream as suggested by someone else and it does make it better. I also never keep pimento in the house, so I oven roasted some red bell pepper and it was great. The other night I made this again and didn't have bell pepper so I cut up some black olives in it instead and that was good too.

Roasted Vegetable Lasagna

This was my first veg. lasagna and it was awesome! I made it because I have a friend who is a vegetarian coming over for dinner. I'm a big meat eater, but this pleased everyone, even my husband. I didn't have any eggplant in the house, but I have a lot of zucchini so I just used a little extra of all the other veggies to make up for it. Everyone loved it and the leftovers didn't last long!

Slow-Cooked German Short Ribs

Awesome! This is the first time I have every attempted to do ribs and they were fabulous! My husband is a picky eater, but I got rave reviews on this one. I used boneless ribs and they were great, not greasy at all. I browned them slightly first, but did not use flour. I used a spicy bbq sauce instead of the chili sauce. I reduced the brown sugar to 1 Tbsp as suggested by others since I'm not big on my meat being sweet. I didn't have regular vinegar, so I used balsalmic vinegar and it gave it a really nice flavor. I also threw in a tsp. of minced garlic.

Hot Artichoke Spinach Dip

This is a great recipe! I always make it for company and they love it! You can substitute the heavy cream for mayonnaise and the minced garlic for 1 tsp. garlic powder. I also added more mozzarella to the top.

Blueberry Coffee Cake I

I made this for a bake sale and it sold out! Everyone loved it. I didn't measure the blueberries so I probably used more than 1 cup and I ended up not using all of the topping. It might be better if you layer some of the topping with the batter and blueberries. It was definitely a big hit!

Tiramisu II

Excellent recipe for a first time tiramisu maker! My husband doubted my tiramisu-making skills until I made this recipe. He is picky and he loved it! I left the lady fingers whole and used a bit more coffee to compensate. But make sure you use a deep enough pan if you do that. I would also agree that it is better when made the day before.
