French Silk Chocolate Pie II

Reviewed: Mar. 26, 2005
Made for Easter. Rave reviews! I followed the other suggestions and used 4 Eggbeaters, the baker's sugar and upped the cocoa to 7 Tbsp. Also whipped after each egg for 6 minutes, and kept egg beaters in refrig. between beatings. Between the 3rd and 4th egg was a bit soupy, so put in freezer for 10 minutes, whipped another 5, and turned out per-fect! Served with Chocolate syrup drizzled on plate, and whip cream on top. Wonderfully simple, but "showy".

Brought to Thanksgiving Dinner - a great alternative to the Green Bean Casserole. Like others, I left the eggs out.

These were fantastic and easy. Next time I think I will make more of the cinnamon sauce to get a deeper ribbon of brown.

Cranberry Pistachio Biscotti

Reviewed: Dec. 23, 2009
Delicious and so easy to make. I used 1 c. cranberries and 1 c. pistachios and added 1 t of orange extract. I followed others suggestions and covered with a towel when cooling, to prevent cooling. I also made sure the loaves were completely cool before cutting. Used a regular knife and pressed down - no breakage or crumbling.
