Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Jul. 12, 2008
Served it for a jewelry party, and got lots of compliments on it. Everyone LOVED the chips (followed a previous suggestion and sprayed with butter, layered, and cut with a pizza cutter -= speeds the process up). For fruit I used kiwis, mandarin oranges, blueberries, strawberries and raspberries. It doesn't have a very long shelf life, as the next day it was fairly mushy.

Spicy Baked Sweet Potato Fries

Reviewed: Jul. 12, 2008
I like the idea of baked sweet potato fries, but I had a hard time getting mine to crisp. Some burned, and others were still mushy. I used Sea Salt and Ermil's seasoning instead of the taco seasoning. I am not sure I will try this again, as I am not patient enough to futz with trying different temp/time combinations.

Mango Chicken Piccata

Reviewed: Jul. 12, 2008
The chicken was great, but we thought the sauce was merely ok. I served it over Jasmine rice. The recipe made alot of sauce, so if I made this again, I would probably half the sauce recipe. Like others, I didn't really taste the mango in the chicken coating.

White Chocolate, Chocolate Cookies

Reviewed: Jun. 22, 2008
5 stars on taste, 4 stars for consistency. Based on other's suggestions, I decreased the white sugar to 3/4 c. and flour to 1 1/2 cups. Also, I only had 3/4. cocoa, so added 1/8 c chocolate syrup. I also did 1 t. baking powder, and 1 t. baking soda. The cookies spread alot, and were pretty thin. I will try making again with no changes and see what happens. The taste was unbelievable!

Irish Cream Bundt Cake

Reviewed: Jun. 9, 2008
Ok, not great. Seemed to get better the a couple od days later. I used the method from a previous poster of putting the glaze in the pan and then putting the cake back in the pan. It resulted in the top of the cake being almost soggy, and the bottom of the cake without glaze. If I were to make this again, I will try glazing the cake directly.

Fudgy Cream Cheese Tunnel Cake

Reviewed: Jun. 1, 2008
Very easy to make and a huge hit! I had a white cake mix, so I added 1/4 c. cocoa to the cake mix. I made the following adjustments based on other reviews: I used white chocolate chips with the cream cheese mixture and added an egg as well as 1/4 c flour. I also let it cool 1 1/2 hours in the pan before inverting, and had no problems with the cake collapsing. Instead of the glaze, I melted white chocolate chips, dark chocolate chips, and milk chocolate chips and drizzled on top. Next time, I will cut back on the cream cheese to 1 8oz and 1 3 oz package as I had extra this time. Great recipe!

Alysia's Basic Meat Lasagna

Reviewed: Jun. 1, 2008
Incorporated suggestions from previous reviewers and it was a hit!! Used 1/2 lb pork and 1 lb hamburger. Used 2 jars spaghetti sauce (omitted the 8oz can tomato sauce)with par-boiled noodles. Used small curd cottage cheese instead of Ricotta.

Baked Pork Spring Rolls

Reviewed: May 26, 2008
I made this So easy! I didn't change a thing. I brought it to a Memorial Day get-together, and everyone wanted the recipe. I went to an asian grocery store to get the spring roll wrappers. They had 2 sizes of wrappers, so I tried them both. It was much easier to wrap using the larger wrappers. One can either serve the larger, or cut in half for more of a appetizer size.

Creme Brulee French Toast

Reviewed: May 10, 2008
Fantastic! I had 6, 12 year old girls sleepover last night outside in a tent, and this was just the breakfast to welcome them in the house in the morning. The house smelled great, and the girls inhaled this. In fact, I was told I should open a B&B. :-) I served with banana slices on the side. My modifications: filled the 9x13 pan with bread (about 10 slices), used 4 eggs instead of 5, and added some cinnamon to the egg mixture.

Easy Indian Butter Chicken

Reviewed: Apr. 27, 2008
Delicious!!! I used only 1/2c of butter, 1/2 & 1/2 instead of the whipping cream. Otherwise, made it exactly as written. Served with Jasmine rice and Palak Paneer. Yummy! We couldn't stop eating it! Next time I will try the low fat version that was recently posted.

French Silk Chocolate Pie II

Reviewed: Mar. 26, 2005
Made for Easter. Rave reviews! I followed the other suggestions and used 4 Eggbeaters, the baker's sugar and upped the cocoa to 7 Tbsp. Also whipped after each egg for 6 minutes, and kept egg beaters in refrig. between beatings. Between the 3rd and 4th egg was a bit soupy, so put in freezer for 10 minutes, whipped another 5, and turned out per-fect! Served with Chocolate syrup drizzled on plate, and whip cream on top. Wonderfully simple, but "showy".
