Chocolate Cavity Maker Cake

Absolutely delicious and so easy! Like others, I used chocolate chunks instead of the chips. Dusted with powdered sugar and served on a chocolate drizzled plate with vanilla bean ice cream. Company worthy!

Country House Bed and Breakfast Casserole

Wonderful! The whole family gobbled this up. I doubled and put in a 9x13 pan. Cooked for the time listed. When doubled, I used 2 c. of StoveTop stuffing bread cubes.

"The best lasagna you ever made", said my husband. We love this recipe since the sauce is not very sweet. Only thing I changed was to use 1.5 lbs of ground beef.

Rainbow Salad

I used the color of the rainbows and put in a bundt pan for a mold. It turned out beautiful, but the layers separated after awhile, and broke when plating. We all decided this was our family version of "broken glass" salad. :-) The taste was great. Even the non-jello eaters had seconds. I used all sugar-free jello, so maybe that cut down on the sweetness that others have mentioned.

Slow Cooker Mashed Potatoes

Only modification was to skip the butter (people can add as much as they like on their own plate), and used chive and onion cream cheese instead of the plain cream cheese. This was a hit and so easy!

Delicious Ahi Fish Burgers with Chives

Like others, I added fresh garlic and some soy sauce. The flavor was good, but the consistency was too fine (my fault - blended in a food processor, and they didn't stay together well when flipping in the pan. I will make again, but will add celery for some texture, and will not blend as long.

Pan Fried Halibut Steak with Light Green Sauce

I substituted 1/2 & 1/2 for the cream and used Talapia instead of halibut, but otherwise made as is. Huge hit! The sauce would be good on chicken too. I would recommend doubling the sauce.

Chocolate Chip Cookie Bars

These were ok. Based on other reviews, I added an egg and a tablespoon of milk. As others have said, they have a shortbread taste/texture to them. They are ok, but I prefer more of a cookie bar.

Pennsylvania Coal Region Barbecue

In a family of five, two people rated it a 5 and 3 people rated it a 4. I increased the mustard to 1 T, and decreased the sugar to 3/4 T. and substituted tomato sauce for the ketchup. Then, I doubled the recipe - we had very little left over. It was a hit, and I loved it because it was super easy and quick for a hectic night.

Kielbasa Alfredo

The only thing I changed was to use Penne Pasta. The kids and my husband thought it was good, which earned 4 stars. I gave it 5 stars since the family liked it PLUS it is a super quick dish.

The Best Meatballs

Like others, I baked my meatballs. I made mine a little smaller than a tennis ball. I baked them on a cookie rake with a foil-lined cookie sheet underneath for 25 minutes at 375 degrees. Instead of the called for water, I used 1/2 c. water, and 1/2 cup milk and substituted 1 c italian bread crumbs. My family LOVED these!!

Southwestern Egg Rolls

Delicious! The only changes I made were to leave out the peppers, substituted egg roll wrappers instead of the tortillas, and baked at 475 degress for 10 minutes for a healthier version. Using the egg roll wrappers, I got 10 smaller rolls (instead of the 5 the recipe yielded using tortillas).

Red Velvet Cake III

The cake was delicious and very moist. I really liked the frosting (light and not too sweet), but my husband did not. He likes the traditional frosting for this cake.
