Lentil Loaf

Reviewed: Jul. 4, 2006
So .. I am on the way to the oven with my lentil loaf! I am hoping it turns out! I am always looking for easy protein based meals without meat. I made a few changes. I did not have enough bread so I substituted it with some bread crumbs and bread. I used knorr vegetable mix but did not use the bouillon cube or bread crumbs on top based on others suggestions. I added a little hot pepper, cilantro, hungarian paprika, and curry. Rather than use tomato paste - I used some tomatoes that I just dried out yesterday with my dehydrator and a handful of flaxseed. I am hoping this is one of those recipies that I can add and take away from depending what is in my cupboard!! Will update you on how it turns out!! Forgot to mention but I cooked the lentils with the tomatoes, spices, and soup mix. Once they were soft and cooled down - I added it to the bread, water egg, onion mixture. Update: Tastes great! I can see that it may be a little dry tomorrow. I think I probably should not have omitted the tomotoe paste but this will be a staple in my kitchen!! Also, will probably make a tomato, brown sugar type topping for it next time (like meatloaf). Enjoy ...

Pineapple, Lime, and Ginger Soup

Reviewed: May 6, 2006
This is a little salty but I liked it. It is an easy recipe for when you dont have many ingredients in the cupboard! I served it with rice and I think next time I will add tofu, scallions, and rice noodles. It is an interesting recipe ...

Orange Beef-Style Tofu Stir-Fry

This was an easy and delicious recipe! I used 5 spice tofu because that is all that I had and it turned out great! Might want to add a little less chili paste to start with though .. you can always add more later!

This made a great soup base. I put it in icecube trays to use as needed! I pureed the left over vegetables and added some milk to make a quick soup.

Moroccan Lentil Soup

Reviewed: Oct. 4, 2005
Excellent taste and easy to make. I had to do some substitutions because I did not have all the spices. I used 5 cardomam pods, 1 tsp curry, 1/2 tsp tumeric, some fresh corriander, 1 tsp ginger paste, dash salt, vegetable cube (which may not really have been needed.),2 cloves of fresh garlic, 1/2 teaspoon of cayenne pepper. I served this with rice and fresh pita bread heated under the broiler.

Batter White Bread

Reviewed: Apr. 3, 2005
I had to try this recipe 2. The first time it tasted great coming out of the oven but it was VERY HEAVY! I tried again the second time and it came out perfect. As other people have mentioned it is important that the water is very hot. This is an easy recipe when you want a little hassle homemade bread. It is great with soups and stew although I don't think I would try it as sandwich bread since the consistency is a little bit different than a kneaded bread recipe. The only changes I made was to use olive oil instead of shortening the second time and I mixed it by hand.

Great recipe! I just moved and had very little in my pantry but this recipe saved the day! I browned the onions until they were very dark brown and I did not add the coconut milk (i didn't have any but will try with the coconut milk again another time. Everyone loved it and it was very simple I served it with rice and french bread.

Yummy Beef

Easy recipe. Great for hectic work days..just stick it in the slow cooker and then enjoy after work.. I added 1 tablespoon of each: italian seasoning, curry. and some salt. I omited the butter. And I also added carrots and green beans half way through cooking. I let it cook in the crockpot for about 6 hours on low.

Chicken and Dumplings II

Reviewed: Aug. 7, 2000
Great recipe! It looked so easy I was tempted to try it. I must admit I made a few changes. I cooked my vegis and chicken (I used bone-in chicken breasts) in the crockpot when almost done I moved them into a pot and added the dumplings. I didn't use the flour for thickening either. Tasted great. Thanks for making such an easy recipe!
