Creamy Pesto Chicken

This was a great tasting and easy to prepare dish! I followed recipe exactly and it was very tasty. Perhaps the only thing I might do differently next time is make more of the sauce since there wasn't really enough sauce to add a little pasta to the dish. Thanks for the recipe Jodie4!

Grilled Garlic Potatoes

Great recipe!! What a tasty way to do potatoes on the grill...super variation on the old steak and boring baked potato! After reading several reviews, I made the following changes: used red potatoes, skin on, slice about 1/8" thick. Increased cook time by 5 minutes (10 each side, 5 to melt the cheese). Used a foil pan, covered with a piece of foil, sprayed both the pan and the inside of the foil cover -- EASY CLEANUP!! Omitted the white onion. In the foil pan, just placed the potatoes, garlic, and a few pats of butter. Crisped up several slices of bacon & chopped some green onion. In the last five minutes of cook time, peeled back the foil, tossed in the cheese and bacon. After 5 minutes, removed from grill, sprinkled with the chopped green onion, and served with side of sour cream. Talk about melt in your mouth! Mmmmm. My new man was very impressed and loved these potatoes! Will make again and again and again!! Side note: these also made great breakfast potatoes the next day -- just heat & serve!

Amazing Italian Lemon Butter Chicken

Excellent dish with a few modifications!! Started sauce by melting 1 T. of butter & adding fresh garlic. Then followed remainder of sauce recipe - except at end I also added about 1/2 C. of parmesan to the sauce. Also, cut up chicken before cooking & coated w/ bread crumb mixture that had garlic salt & parmesan. Used rotini pasta instead to really grab the sauce! Will definitely prepare again. Served with steamed asparagus (I even topped the asparagus with a little of the sauce -- yummy!) Didn't think this took too long since I cooked the sauce, pasta, chicken, & veggies at the same time (when chicken was done, I just added the already cooked veggies to chicken pan then added sauce to that same pan).

This was a terrible waste of scallops! It was like eating a bland pudding with scallops. The combination of heavy cream, melted cheese, and bread crumbs was too overwhelming for scallops. This dish does nothing to enhance the flavor of the scallop -- you could have used chicken and this would have been the same thing (except that chicken is much cheaper than quality scallops).

Chicken and Artichokes

This was very easy to make and tasted nicely. Not sure why the recipe would have this in the oven for 40 minutes?? After browning the chicken, I added garlic to pan (as others have done) then followed recipe until the baking in the oven -- after the mushrooms & sauce were done, I returned chicken to pan, added the artichokes (I used only artichoke bottoms rather than hearts since hearts can have chewy leaves that are hard to eat), then covered & simmered for a few minutes. Turned out wonderfully without baking. Served over brown rice. A very brown-looking dish but tasty. Thanks!

Blackened Chicken

Great blend of spices!! I used the recipe to make a blackened chicken fettucine alfredo w/ baby artichokes -- perfect blend of spiciness with creaminess. Will definitely be using this recipe over and over again!

Wasn't sure what all the fuss was about with this recipe. It's quick & easy so I'll make it again...but it's a little bland so my sides will have to have a lot of flavor to make up it.

Baked Garlic Parmesan Chicken

Very good for a quick & easy meal....and while it's in the oven for 30 minutes, it allows you to prepare your side dishes. I used less bread crumbs and more parmesan than what the recipe called for and added about a half cup of broth to the casserole dish to keep it from drying out.
