Broiled Tilapia Parmesan
I usually bomb big time with fish but i wanted to try one more paid off with this wonderful recipe! I did one minor change, or rather addition which i would recommend...i added buttered italian bread crumbs after i broiled the topping for 2 minutes and then i broiled it again for another minute or so until the crumbs were brown. The lemon flavor comes out beautifully and the texture is fabulous! I cannot wait to try this again and serve it to guests to impress them! Great with wild rice and a salad!

Ground Beef Enchiladas
Super easy, super fast! Great if you are in a hurry. I used flour tortillas because that was all i had. However, for those who have trouble with corn tortillas falling apart, you have to dip them in hot oil for about 3 seconds first and they will fold nicely. I also used green chilis since i don't like hot stuff. Make the Mexican Rice II recipe on this site and it makes for a fantastic meal.

Kettle Corn
OH NO! I'm almost upset i found this recipe! I was secretly hoping it would be terrible because now i am hooked and will be wanting it about every is just as good as kettle corn you would find at a festival. It's very easy to make, i just suggest that you continue to shake the pan while cooking, even taking it off the burner and hold with pot holders to get a good shake in once in a while. Add salt when it is still warm. Fabulous recipe!!
