Chicken Pesto a la Lisa

This dish puts Italian restaurant recipes to shame! Wonderful flavor! Didn't have fusilli pasta but whole grain penne worked just fine. I also used low sodium chicken broth since the cheeses had enough salt. Next time I'll double up on the sundried tomatoes- they're my favorite. I'll be keeping this one on my favorites list!

Pumpkin Layer Cheesecake

I found this to be a little too "cheesecakey". I prefer more of a pumpkin taste. I must have done something wrong during the layering step because the pumpkin "layer" sunk into the middle of the cake and when I served it, you only tasted pumpkin in the first bite or two. The taste was good but not like I was expecting. It's worth another try...

Avocado Salad

Light and refreshing! All ingredients are my favorite so I found this to be an excellent recipe! I didn't have cilantro on hand but I'll try that next time. I think I'll even try adding some chunks of whole milk mozzarella cheese. Yum!

Garlic Chicken

The chicken was very flavorful and juicy! I had thicker cuts so it took longer to fry but it was worth the wait! No complaints from the kids. (That alone deserves five stars!) Thanks for the recipe!

Baked Pork Chops I

These were a nice change from dry, tough chops. I added another can of mushroom soup, added garlic powder to the chops AND in the breadcrumb mixture, and added fresh sliced mushrooms. I served them over wide egg noodles and had extra gravy for leftovers the next day! More prep time than I would have liked but worth it in the end.

Chicago Dip

YUM! As suggested, I used only 1/2 cup of mayo and 1 1/2 cups of sour cream. I also added 1/4 tsp of garlic powder and 1/4 tsp of onion powder. I ran out of bread pieces within minutes of our BBQ so I just put out some tortilla chips. People even tore at the lining of the bread bowl to get to the rest of the dip! The dip tastes great with raw veggies too! Next time I'll have more Italian bread on hand.

Angel Hair Pasta with Shrimp and Basil

Edible but not fantastic. It just seemed to be missing something. I added salt and extra garlic in hopes of bringing out the flavor but no luck. I did like the fact that it wasn't a heavy meal.

Puerto Rican Tostones (Fried Plantains)

Delicious! I flattened them using the bottom of a coffee mug and refried them *without* dipping in water (too much oil splattered as a result...Ouch!). They were just as crispy as the water dipped plantains. Will make again and again!

Puerto Rican Steamed Rice

Very, very good. I was a little worried about the amount of salt required but it was perfect! *Just a word of caution... When stirring/mixing during steaming or when ready to serve, don't scrape from the bottom layer of the pot or you'll mix and serve yourself hard, crispy rice. I happen to like the "crusted" bottom layer but not everyone does.*

Carne Guisada III

This is just as good with chicken! I sauteed chicken strips in a large pan using this recipe. I taste as I cook and realized that the sauce was a bit salty so I added more water to my liking. The chicken was tender and very flavorful! I made it with Puerto Rican Steamed Rice from this site. Great meal!

Burrito Pie

I added taco sauce to the meat, left out the chilis, and served it with sour cream. I thought the meal was good but my family wasn't as impressed. I guess we'll just stick to tacos.

Italian Spaghetti Sauce with Meatballs

I only made the meatballs from this recipe and found them just "okay". I used two eggs to avoid dryness and even seasoned the meat with additional spices but in the end they were still a bit bland. Maybe next time I'll use less breadcrumbs and add salt.

Chicken Piccata II

This was a treat to the taste buds! I doubled the sauce and realized during cooking that it was a bit too sour. I modified it by adding more water, more chicken stock, and more butter. I also thickened the sauce by using some corn starch and added capers before serving. Yum! Served with spiral pasta and hot buttery garlic bread! Also makes a good dipping sauce for the bread!

Broccoli Chicken Casserole I

With modifications, this casserole does not disappoint the taste buds . I boiled the chicken with a can of chicken broth, 1/2 a can of cream of chicken soup, and a little bit of water. I also added some chopped garlic, salt, and pepper to the boiling water. Once boiled, I cut the chicken into cubes. I then combined the boiled mixture with the mayo, the cream of mushroom soup, and mixed in the cubed chicken. I also mixed in the broccoli. I followed the recipe from that point. Others have posted that the chicken was bland and dry but if done this way, you'll have great results.

Sausage Casserole

This was very good! I made this for Mother's Day brunch. I wasn't quite sure how cottage cheese would taste mixed with eggs and sausage but once served, it didn't last long. I cheated by using packaged hashbrowns ("Simply Potatoes" in the refrigerated isle). I also cooked the onion with the sausage since my family isn't really fond of raw onions. I think next time I'll use sharp chedder for extra taste. Otherwise, I wouldn't change a thing!

Awesome Slow Cooker Pot Roast

It should be known that this dish is more of a "stew" consistency, especially if veggies are added. Either way, it tastes GREAT, the meat is "fall apart tender" (as long as you have a TIGHT fitting lid) and the slow cooker is a practical way to have dinner ready right when you walk through the door! What more could you ask for?

Creamy Pesto Shrimp

This was very good. I added chopped garlic to the butter mixture and salt to taste. It was extremely easy to make and the taste was excellent! My picky 5 year old had two heaping servings! Next time I'll add crab meat as well!

Mushroom Pork Chops

This was good. I would have given it five stars if the chops were more tender. Maybe they simmered for too long? The taste was outstanding though. I added 1/4 cup of white wine as others suggested, another half of a can of mushroom soup, and of course, some fresh garlic. I served them with roasted potatoes and green beans. Very nice meal. Will keep it around for future use.

Mrs. Sigg's Snickerdoodles

These were good, but they seemed like they were "missing" something. I liked the chewy centers but once you passed the cinnamon/sugar coating, the centers were bland. I might try adding some cinnamon in the dough mixture next time or maybe more vanilla? This cookie recipe has potential; just needs something else.
