Chuck's Favorite Mac and Cheese

Reviewed: Apr. 26, 2009
This wasn't horrible, it just wasn't as great as I thought it would be. It had the baked consistency vs creamy type that I was looking for, but I definitely found it to be lacking in the flavor department. Perhaps adding more cheese and more salt would help.

Cowboy Cookie Mix in a Jar

Reviewed: Dec. 11, 2008
Based on other reviews, I added 2 tablespoons of milk to the mix to make them more moist. I thought the cookies were tasty but even with adding the milk, the texture was a bit dry. I think adding another tablespoon of milk would make them just right. I also think adding a teaspoon of cinnamon would add extra flavor to the cookie. Overall, it's an average cookie recipe.

Baked Slow Cooker Chicken

Reviewed: Aug. 24, 2008
Don't know what went wrong, but the chicken was dry and a bit bland.

Italian Style Pork Chops

Reviewed: Aug. 9, 2008
Not sure what the secret is but all I was left with was soggy breading! The chops were still edible so it wasn't a complete flop but they weren't at all what I was hoping for. Still on the hunt for a CRUNCHY pork chop recipe...

Chicken Noodle Casserole

Reviewed: Aug. 9, 2008
If you're looking for comfort food, you have found it with this recipe! This was really good. Took some time for the preparation but worth it in the end. The kids enjoyed it without picking out the veggies and hubby claimed the leftovers for his lunch the next day!

Shrimp Lemon Pepper Linguini

Reviewed: Aug. 9, 2008
This was awesome! Unfortunately I did not have white wine so I used extra chicken broth. I also added sundried tomatoes and topped it off with some capers for some extra flavor! I doubled the sauce like everyone has suggested but I left the pepper at two teaspoons instead of doubling it as well. It was PERFECT!

Braised Balsamic Chicken

Reviewed: Jul. 8, 2008
EXCELLENT FLAVOR! Added minced garlic along with some mushrooms to mine and it was FANTASTIC! The sauce would also be great as a Bruschetta mix served cold with toasted french bread!!! Yum!! Will definitely be making this again and again!!!

Marinated Flank Steak

Reviewed: Jul. 7, 2008
Five stars for the marinade! It was so flavorful and juicy!!!!! As far as the steak itself, I'd probably give it three stars because it was not as tender as I expected; especially since I marinated it for over 6 hours. Maybe it was just a poor choice in the flank that I selected? The flavor definitely made up for its toughness though. I will definitely make this again but with a more tender cut of meat.

Salmon and Spinach Fettuccine

Reviewed: Apr. 20, 2008
CAUTION: Taste as you cook, especially when it comes time to add the oregano! I would have given this recipe a higher rating had it not been for the overwhelming amount of oregano. I changed this recipe for 10 servings so I don't know if the conversion was wrong but 1 & 1/4 cup of the spice was entirely too much for my liking! I might try this again without the all the oregano.

Slow Cooker Chicken and Dumplings

Reviewed: Mar. 16, 2008
This was good but not great. I thought it was a little on the bland side. My husband loved it and the kids picked at it so I guess I'm right in the middle. If I did make it again, I would have to season it with more salt and pepper and maybe some garlic? Definitely has potential though...

Campfire Banana Splits

Reviewed: Feb. 23, 2008
These were great! We put these on the grill after dinner one night. The kids enjoyed stuffing them with mini marshmellows, chocolate chips, and crushed graham crackers for texture. I wasn't sure how they'd react since they're not banana lovers to begin with but they were a hit! They've been asking to make them again ever since!

Chicken Noodle Soup

Reviewed: Feb. 14, 2008
Simple to make as it gets! Great taste and worth the time it takes to simmer! Made this for my hubby and a separate time for my mom when they had the flu. My kids slurped it up, veggies and all! Beats the stuff you buy in the can!

Bob's Awesome Lasagna

Reviewed: Feb. 14, 2008
This lasagna was super easy and quick to make. I used oven ready noodles, added frozen spinach to the meat while cooking, added fresh chopped mushrooms, and of course some extra cheese. Effortless AND kids and hubby loved it! Can't beat that!

Best Chocolate Chip Cookies

Reviewed: Jan. 5, 2008
Aside from the chocolate chips, the cookies were very bland. The centers were chewy and the edges were crisp but when there's no taste, none of that matters. I'm still looking for the "Best" chocolate chip cookie recipe since this one was far from it!

Double-Layer Pumpkin Pie

Reviewed: Nov. 26, 2007
If you like pumpkin, you'll love this recipe. Very simple, tasty, and VERY creamy! I like the subtle taste of cream cheese but I think next time I'll add a tad bit more for extra flavor. Other than that, it's great!

Egg Salad Sandwiches

Reviewed: Sep. 8, 2007
Non-Salt Lovers BEWARE!!!! I scaled this down to four servings and followed the recipe exactly. Recipe called for 1/4 tsp. of salt. I HALFED that and it was still way too salty!!! I couldn't eat it! If I ever try this recipe again, it will be without the salt!

Banana Sour Cream Bread

Reviewed: Feb. 15, 2007
This bread was excellent! I think next time I'll add an extra banana since it tasted more like a coffee cake but it was sooooo moist and the cinnamon sugar coating was a nice touch. Doesn't get much better than this!

Chicken Pesto a la Lisa

Reviewed: Jan. 21, 2007
This dish puts Italian restaurant recipes to shame! Wonderful flavor! Didn't have fusilli pasta but whole grain penne worked just fine. I also used low sodium chicken broth since the cheeses had enough salt. Next time I'll double up on the sundried tomatoes- they're my favorite. I'll be keeping this one on my favorites list!
