About this Cook
I cook because I have to. I bake because I want to. My husband and I have 11 children, and in a few months, 11 grandchildren. We live in a very small house in cow country. Our family get-togethers are tons of fun, but there aren't nearly enough of them!
My favorite things to cook
I love to cook breakfast. And I think the favorite dinner dish I make (according to all the kids) is Chalupa... a recipe my mom found in an Oakland, CA newspaper about 40 years ago. I should submit it and share it with everyone!

Christmas and Easter brunch are the BEST!
My cooking triumphs
I think my only cooking triumph would be the 50th birthday party I threw for my husband. We had a Civil War theme (he's a northerner by birth, but a Southerner at heart!), and fed about 65 guests. I did all the cooking myself and everyone said it was great!
My cooking tragedies
I occasionally make "Imagination Casserole," a mix of whatever I can find that seems like it will make something yummy. One or two of them were successes, but mainly they're just tolerable (or worse!).

Favorite Mexican Salad
My daughter made this to go with my birthday dinner (fried chicken, this salad, mashed potatoes and gravy, and corn... YUM!). The flavors are fabulous together! The only modification I suggest is to double it!

Lemon Pudding Poke Cake
The possibilities are endless! I've used yellow cake mix (any brand will do!), poke the holes, then pour on orange jello made with about two-thirds the required water, cool, cover with vanilla pudding, then add mandarin oranges, then cover the whole thing with Cool Whip. You can use strawberries with strawberry jello, or peach, or a berry combination... Be creative! But the cake-jello-pudding-fruit-Cool Whip blend is hard to beat!

Classic Waffles
These are basic, simple waffles that come out crispy and light. They're even good toasted the next day. We used berries and whipped cream for toppings the first time we tried them. The next time we went with real maple syrup. Delicious!
