Martha's Cornbread Dressing

This is a basic bare bones Southern dressing recipe. Few things to keep in mind, the cornbread (add extra eggs to the cornbread while making) and biscuits need to be cooked a day or two in advance to allow them to stale. I also crumble up stale white bread and sub poultry seasoning for the sage.

Chicken Pot Pie VIII

Made this tonight and the Husband LOVED IT! I took the advise of others and steamed the carrots and potatoes before adding to the meat mixture, I also used half crisco half butter in the crust. This is now going to be a regular at our house.

Garlic Chicken

I fixed this tonight for dinner and my husband loved it! He’s not a picky eater but he is use to a fairly high caliber of dishes and this was a hit, and with so little prep time involved I loved it. Next time I think I’ll make my breadcrumbs a bit coarser, and not grate the cheese as fine. Can’t wait to try variations of this dish, panko and sesame seed oil with ginger or even minus the Parmesan and then crumble blue cheese on the top. I can see this is going to be a base dish for some of our favorites.

Mini Meatloaves

We aren't big meatloaf fans but I was looking for a way to use up some ground sirlon and gave it a try. The husband and I both cleaned our plates and enjoyed every bite. I did add onions, fresh garlic, worcestershire Sauce and colby/jack cheese. Even if you don't like meatloaf try this one.

Tart Lemon Triangles

Restaurant-Style Tequila Lime Chicken

Made this but left off the Mexi-Ranch dressing. Added more lime and tequila, chopped green onion and cilantro and grilled. Served with pico de gallo as a garnish with spanish rice and a cilantro salad and it was great. I've done this twice, with and without cheese and both are keepers, just a matter of taste

White BBQ Sauce

This "white sauce" was made famous at Big Bob Gibson's BBQ in North Alabama. Several things are left out in this recipe such as horseradish and apple cider vinegar. Let it sit for a few hours to overnight and it really melds the taste.

Donna's Famous Cheesecake

I felt the crust on this was to thick and next time I will use less crumbs. Taste was alright plain but was wonderful with a topping. Texture was perfect and the helpful hints are a must to read. Will make this again but will add lemon juice and zest to give it a little more life.

Coconut Cream Cake I

Very good but to elevate it I made a few changes. I substituted low fat coconut milk for water, melted room temp unsalted butter for oil. Between the layers I added toasted macadamia nuts along with the coconut and whipped icing. For the frosting I increased the sugar as well as added both vanilla and coconut extracts. This is a very very sweet cake and a small slice goes a long way.

Amazing Chicken

I made this the first time as the recipe called and it was alright, after playing with it a little I really enjoy it. I mix about half and half mayo and sour cream and add parmesan cheese. A coarser grade of bread crumbs makes a difference.

Pork Chops with Raspberry Sauce

Had this last night for dinner and It needs work. The sauce was to sweet and way to thin. The spice mix was perfect for the chops and a fruity sauce. Will make again and tweak the sauce, till then only 3 stars.

Easy and Delicious Chicken

I'll give this two stars because it didn't go straight in the trash, the husband ate about half. I had high hopes for this because I tasted the chicken early on after cooking in the dressing, I should have stopped while I was ahead. Will NOT be making this again.
