Pork Marsala
I had high hopes for this recipe, as I have done almost the exact same thing with chicken and loved it. After we began eating, I had to return the pork to the pan for 10-15 more minutes, as it was underdone. Perhaps I should have done better at checking on the donenes. Also, my attempt produced no sauce! I followed the directions exactly. It only took a fraction of the seasoned flour to thoroughly coat every piece (1 lb total). Instead of a sauce, I just had coated pork swimming in butter and oil- with the occasional tiny flour glob, even when I attempted to 'thicken' it with additional flour. The flavor was still good, so I'll probably try it again. Next time I will cook the pork much longer, remove it from the pan, then add flour to the butter/ oil/ wine until it makes a sauce, then return the pork to the pan, and cook it all a little longer.

Champagne Chicken
Well, for one thing, though I do find the tips for modifications quite helpful, let's review the actual posted recipe! Resubmit your modified version! I was excited to try this- sounded good & easy. I was a bit concerned about cooking the chicken in the champagne for 1/2 hour. OK, I should have been better about checking on it, but my end result was chicken that was badly burned on the bottom!! I scraped off the blackness in attempt to salvage the meal, but it was still just OK. I think I'll try it again anyway, being more attentive, and lessening the time/ temp.

Easy Baked Fish
Well, in short, Yum! Well, my husband didn't like it (but he says he doesn't like fish!) I was anxious to try this, as it had no bad reviews or change suggestions. Well, someone mentioned cooking the rice ahead (which I did). I made a few substitutions, but purely out of necessity. I couldn't get sole, so used orange roughy. I used cooking sherry- no white wine. Oh, and I accidentally got green pepper. I don't know if red bell was called for because of color or taste, but it was still good- and colorful! I was surprised that the tomato was not merely decorative, but added a nice flavor. Once again, it made a nice, colorful presentation. I also loved having the side dish built in! The butter sauce may have 'slid' off- I sprinkled a little garlic powder on my serving after cooking. Ok, one more little thing: I like my veggies crisp, but it would have been nice if the bell pepper had been just a little softer. In summary, a great dish!!
