Made with lowfat Hellman's Mayo. I also totally forgot to add the vegetable oil, and it was too late to add later, still it was Delicious!

Delicious Vegetarian/Vegan meal! I mixed in about 1/2 cup cooked quinoa and ate as a main course. Very healthy and satisfying. The lemon really brightens up the cumin. Will make again.

Sweet and Sour Pork III

Delicious! Will make again. I was a little leary of all the added salt in this dish, but the salty marinade for the pork gave it some great flavor!

Pear Walnut Chicken

Reviewed: Dec. 9, 2011
I thought it was very good. Used fresh pears, unsweetened applesauce in place of apple juice, and served over brown rice. Nice combo of savory and sweet. Only 4 stars because it was good but not out of the ballpark excellent. The subs I made shouldn't have affected the outcome too much.

Spicy Garlic and Pepper Shrimp

Reviewed: Nov. 30, 2011
I liked it a lot, my boyfriend did not, but then again he's not a big fan of cabbage. I thought the recommended amount of red pepper flakes would have been ridiculous. I eat hot food all the time and 1tsp of flakes was more than enough. I also added some other veggies like celery and bell peppers which I thought turned out really well. I also only used 1 tbsp oil in the entire dish which I doubled for 2 people. Very healthy, simple, and flavorful! I may serve over brown rice next time for the BF.

Kickin' Collard Greens

Reviewed: Nov. 22, 2011
Great! I used Franks Red Hot in place of the crushed red pepper and crumble bacon to help reduce the fat. Also omitted the olive oil and used pam instead which still turned out just fine. Very flavorful and good!

Spicy Baked Sweet Potato Fries

Reviewed: Nov. 21, 2011
Mine only took 30 minutes to cook. I used the taco seasoning, but used olive oil instead of canola and added couple dashes of Old Bay Seasoning. Very good!

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Nov. 17, 2011
I only gave a 4 because my cookies did not turn out like the picture, despite my having followed the recipe. They still tasted very good. I will make again.

Lemon Pie Bars

Reviewed: Sep. 12, 2011
This recipe is very delicious, and pretty fool proof considering that I totally messed a couple things up and it still turned out tasting great! At others' suggestion I did end up doubling the filling mixture, which seemed like the perfect ratio of lemon to crust to me. The mistakes I made inadvertently made the dessert healthier, so if anyone was interested I used 4 real eggs, and 1 cup of eggbeaters because I ran out of real eggs, used splenda blend white sugar in place of powdered in the crust because I didn't have powdered, and only used the equivalent of 1.5 cups of the splenda blend in the filling, even though I doubled all the other ingredients, because I forgot. Still extremely tasty, but look forward to staying true to the original next time

Watermelon and Tomato Salad

Reviewed: Aug. 30, 2011
The strength of flavor of your watermelon can affect the taset greatly I'd think. Mine was not very flavorful, but this still turned out delicious. I used red, yellow and orange tomatoes, added a tiny bit of purple onion, and only had regular balsamic instead of white, but it still turned out awesome. I will make again and hopefully I'll have better, more correct ingredients next time!

Poor Man's Caviar

Reviewed: Jul. 15, 2011
This is very good and very tasty. I used dry beans, which I soaked and then cooked for about a half hour or until tender. I also broiled my corn so that it browned/blackened a little bit. And used green onions instead of sweet because that was what I had. I've sure you can vary quite a few things with this one and still have it be a great success!

Cucumber Fruit Salad

Reviewed: Jul. 2, 2011
This is a very refreshing salad, and exactly what I had in mind, so this was the perfect recipe. I did sub the sour cream for 0% greek yogurt, and I really doubt it lost and taste points with the sub. Also added 2 tbsp lemon juice to give it a kick and to keep the apples from browning. Really good!

Spanish-Style Quinoa

Reviewed: Jun. 15, 2011
So good! And good for you too! What a great alternative to spanish rice, and it tastes just as good if not better because with the quinoa you get that crunchy texture and nutty flavor. Toasting the quinoa prior to adding the liquid is essential!

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

Reviewed: Apr. 18, 2011
I thought this recipe was very delicious, healthy and fresh tasting. I lowered the oil to 1 tsp, and the recipe tasted very good, however since I like a little extra zest I added a can of diced tomatoes right at the end to give it a little extra liquid and zing. Either way it is a really good vegetarian/vegan main dish or side dish. I will make again.

This was delicious! I used a can of diced tomatoes because I didn't have fresh, and left out the oil to make it healthier. I added summer squash and okra for some added color and bulk. I served over quinoa. Very Healthy, very flavorful. I will make again.

Pumpkin Turkey Chili

Reviewed: Mar. 3, 2011
I gave this recipe 4 stars because I feel like it is an excellent base recipe that is easily customizable to suit ANY taste. I made a lot of changes to suit mine, and I was thrilled with the result. The basic things you should take from this recipe are the canned pumpkin, ground turkey, onion, and the chili powder. I added beans, more diced tomatoes, chicken broth, any veggies on hand, and about a tsp of cumin. Still, the pumkin in the chili adds a nice texture, thickness, fiber, nutrients, and flavor. It is a very tasty and healthy recipe!
