State Fair Crepes

I was craving something with Nutella so I gave this a try. They were delicious. I did not add bacon because I do not have any but they were great either way. The only other time I had tried crepes was at IHOP and I did not care much for them so I was hesitant and only made half a batch, should of made the full recipe. While warming the bananas for my husbands, I added a few pecans for crunch and they were even more delicious. He even loved the crepes themselves without any topping. Will be making these regularly from now on

Powdered Sugar

I made this today because i was Out of powder sugar and was in the process of making frosting for my dads birthday cake. I didn't want to go out to the store to buy some so I decided to make half a batch. I used the ninja blender and put it in the highest setting for about 10 minutes, while the sugar did become finer, it did not turn into powder. I put it at the highest level again for another 10 minutes but it was still the same. Thinking it was fine enough I went ahead and prepared the frosting. That was a huge mistake, no matter how much I beat the frosting, it was just too gritty. My ninja blender is new and I have blended whole fruit so I'm not sure what the problem is, it just did not work for me.

Maria's Mexican Rice

Look no further for an authentic Mexican rice recipe, this is it. My mother ran a very successful Mexican restaurant with my aunt in chihuahua Mexico for many years before marrying my dad and this is the recipe she uses to this day. I have never had a better tasting rice in any wannabe Mexican restaurant here in the states. She adjusted the recipe for my brothers who won't eat onions without loosing flavor. Instead of sautéing the onions, she blends it with a clove of garlic and a quarter cup of water and adds it along with the water. This eliminates the use of garlic powder and uses the healthier option of real garlic. If you are out of tomato sauce, you can also blend a fresh tomato to the onion and garlic mixture. We never add pepper and cumin though, the chicken bullion and salt should be plenty of flavor. Taste the broth once all the liquid an spice has been added to the fried rice before it is absorbed, this will be a great time to taste test for flavor, if any is needed add more, if it has too much, add more water. A can of mixed veggies can also be added at this point, we always use peas and carrots.

Fudgy Brownies I

I love that these dont requiere butter so they aré more cost efficient to make. I added about 2 handfuls of chocolate chips to the batter and sprinkled them with pecans before baking. I also used half a cup of strong Coffee instead of plain hot water to bring out the chocolate flavor. I have never had these cold because they always disappear before they cool.

Best Ever Jalapeno Poppers

My husband loves these. I don't use bacon because I don't keep it in the house and I think it's a pain to make. What I did different in this recipe is to roast the jalapeños on the girl until the skin blistered, I then put them in a plastic bag and until cool then removed the skin and seeds without taking the veins out since we like spicy food. I then mixed the milk and an egg together, after the coating of flour, I mixed the milk mixture and remaining flour to make a batter. Once the peppers were coated in batter, I did a final coat of panko instead of bread crumbs for a crunchier breading. Can't get enough of these

Peanut Butter Cup Cookies

These have become a family tradition on Christmas at our house. Kisses chocolate can be easily substituted for the peanut butter cups. Just make sure to freeze the chocolate before placing it on the hot cookie otherwise it will melt. I don't know how these taste after a few days because they always disappear the same day

Mexican Corn on the Cob (Elote)

This is really good. Almost as good as the elote mans. I add chili powder to mine, the spicier the better. We sometimes boil the corn because we live in Phoenix and it's just too hot to barbecue in the summer. If you can find real Mexican corn, the kind that is white and not sweet, it will taste a lot better. The butter is not essential, we usually leave it out and just use mayonnaise but then again I know people who leave out the mayo and just use butter. Either way, just leave the condiments out and have each person prepare theirs according to their taste

Strawberry Daiquiri

Love this drink, it's like a strawberry icee but healthier since you are using real strawberries. My kids like this with ginger ale while I like it with lemonade. I usually scale this down to one serving and add a whole fresh squeezed lime. Various berries can also be added with the same great result.

Take-Out Fake-Out Pollo Con Crema

This was.... Bland to say the least. It reminded us of a frozen microwaveable meal. It is kind of arrogant of the submitter to very matter of factly state just how good this recipe is, when everyone has different taste and what may be good for one person may be bad for another. It was thumbs down from everyone in our house. The ketchup was just very out there. I grew up with real Mexican food and this is just not it. I guess you can slap a tortilla and cumin on any meal and call it Mexican food.

Banana Cream Pie I

This is my go to banana pudding recipe, I make this A LOT because this is my sons all time favorite dessert and since he is 13, he eats a lot. Using only flour works for me, the pudding thickens up with no problem. Tempering the egg yolks is essential. I think the the trick to this recipe like any other recipe wether cooking or baking is technique. It does not matter if the recipe is followed to the t, technique has to be aquired. I don't bake the pie at the end, I just let the pudding cool on the pie crust otherwise it will get too gelatinous like and firm and we like the pudding consistency. One thing that may help with getting the pudding to thickening up is whisking, as soon as the milk is poured on the dry ingredients, do not stop whisking until it starts to bubble.

Agua de Jamaica (Hibiscus Water)

As the first reviewer dagirlandei stated, this Is good but an exaggerated version of Jamaica. When it comes tho this drink, the K.I.S.S rule should be applied: Keep It Simple Stupid. This is just tea and should be treated as such, brew it, add sugar to taste, and let it cool. All the cinnamon and piloncillo take away from the Jamaica flavor. This is a really refreshing and healthy drink if drinking it as regular iced tea, kind of like a lighter version of cranberry juice, it is also great for kidney and bladder problems like cranberry juice

Agua de Melon (Cantaloupe Juice)

How about blending the cantaloupe with a lot less water and then just mixing the remainder of the water and milk in a separate container. We are not robots here and have the intelligence to think outside the box. As far as sugar goes, it can be adapted to taste, that is also a no brainer. I would agree to add a few drops of vanilla extract. My mom usually blends half the cantaloupe and cuts the rest in chunks and throws it in the pitcher; this is just personal preference. This a traditional agua de melon recipe, excess sugar is usually added because it Is traditionally made in large amounts and a lot I ice is added to keep it cold, when served, a lot of the ice has been melted and will water down the sugar. If making a small batch just adapt sugar to taste. My mom also adds a special food coloring to it but it is not sold in the states and it is just for presentation. As my brother calls it, this drink is the nectar of the gods.

Chile Colorado II

This should be called tomato Colorado. Way too much tomato and not authentic at all. If anything this recipe resembles chile verde more. The Colorado ( red) color of chile Colorado should come from dried red chiles not the tomato. Jalapeños and Serrano peppers are not traditionally used for this recipe. No one enjoyed this recipe and had to be given to the dogs.

Easy Cowboy Beans (Frijoles Charros)

This is nowhere near frijoles charros. The main ingredients of frijoles charros are missing. For authentic flavor try the only other recipe on this site. Might as well eat beans straight from the can

Mexican Atole

Im a first generation American so I grew up drinking authentic atole every Christmas. My mom learned from her grandma and this recipe is close enough except my mom always used milk. When using water the consistency will be off and just won't be nearly as good and creamy. Note: never put your finger inside atole. If you don't know what I'm talking about try it an you will find out what I meant. Lol

Nana's Apple Crisp

Family loved this. Usted half white and half Brown sugar. Also added 1/3 cup flour, 1/3 cup sugar, a whole lime and1tsp cinnamon to apples. I don't think the additional 1/2 cup butter on top is necessary. Will definitely make this again
