My favorite things to cook
I love cooking with Chicken and Pork. My favorite food is Italian but my figure wont stay the way it is if I eat it all the time. :)
My cooking triumphs
Chicken Squisito...Google it and you will absolutely love this recipe. I found it years ago in a magazine on an ad for Sorrento cheese..its my favorite.

Italian Breaded Pork Chops
I cook these chops in skillet after taking out the browned cloves. They are really tasty thanks to adding those cloves to the oil before cooking them. I too, use the ziplock bag to coat the chops with the breadcrumb mixture. It is a good idea to reduce the mixture and also the egg wash ingredient amount...way too much goes to waste if not.

Amy's Garlic Egg Chicken
This chicken is so full of flavor. I used 2 eggs to make the garlic "marinade" instead of 1- it coated all 4 breasts evenly. I also reduced the bread crumbs to 1/2 cup and the cheese 3/4 cup. It was so moist and tender after cooking 15 mins each side.

Spinach and Mushroom Quesadillas
These came out with much more flavor than I expected. Loved them!! I did add onions to the spinach/mushroom/garlic that was sauteed. I seasoned the sauteed mixture with s&p, onion powder, and garlic powder which may have increased flavor. I used olive oil and 4 garlic cloves to sautee and then used the butter only in the final step when browning each side of the quesadillas. served with sour cream and loved it.
