Perfect Coconut Macaroons

These were divine! They turned out exactly as I hoped they would. They seemed just like a macaroon from a bakery. Wonderful texture and just the right amount of sweetness. The ratio of ingredients works perfectly. I find this kind of macaroon to be so much better than the kind made with sweetened condensed milk. I prefer larger shreds of coconut, so I skipped the step with the food processor. Instead I mixed all of the ingredients (minus the egg whites and extracts) in the mixer on low speed until well combined. After moving that mixture to a large bowl, I beat the eggs whites and then beat in the extracts. I omitted the almond extract this time, but I may add it back in next time. Thank you for such a wonderful and easy recipe!

Chocolate Snowballs

I love these cookies! I know them as an old family tradition. I was given the exact recipe by my mother-in-law, who received it from her grandmother. I was pleasantly surprised to see it on All Recipes. These are a Christmas tradition for us, and I look forward to them every year.

Ginger Glazed Mahi Mahi

This review is only for the marinade, because I used salmon rather than Mahi Mahi. I love salmon, but I generally make it the same way and I was looking for something different. This sauce was out of this world! I marinated the salmon in the sauce and then roasted it in the oven. So flavorful and delicious. I'm giving the recipe 4 stars rather than 5, because I had to increase the ginger significantly to get the best flavor. Thank you for the marinade recipe - I'll be making it often!

Caramels

Simply divine! I made these last Christmas, and everyone went on and on about them. To be honest, I even surprised myself, as I assumed that making caramel from scratch must be harder than this! A bit of advice - let them sit for 24 hours before cutting. It makes the job a lot easier.

Hearty Lentil Soup

Excellent soup for those chilly nights. This soup has a wonderful flavor and is easy to make. My only change was that I increased the amounts of vegetable stock, wine, and Worcestershire as the lentils soaked up a lot of the broth.

No Sugar Apple Pie

This pie was great! This year Thanksgiving was at my aunt's house. She is diabetic, so I wanted to make a dessert that she could enjoy. Not only did she enjoy it, but so did everyone else. They were surprised that it was sugar free and contained no artificial sweetener. Several people have requested the recipe, and I was asked to make it again for Christmas dinner.

Baked French Toast

This was excellent! The sauce is a perfect addition, and brings it all together. I reduced the recipe to make 6 servings, but I still had great results. I did deviate from the recipe by cooking the apples in a separate dish from the bread. I was afraid the apples might make the bread soggy. I will definitely be making this again.

Garlic Chicken

This was great! So easy, too. I added Italian seasonings to the bread crumbs for added flavor. I also had some mushrooms on hand, so I sautéed those in garlic and butter. When serving the chicken, I topped it with the sautéed mushrooms. I will certainly be making this one again.

Taco Dip

This recipe was quick, easy, and tasted great. I made it last night for a party, and everyone loved it. This would be great to serve for football games. I substituted 2 green onions for onion called for in the recipe to add a little more color. I think next time I will only use 2 cans of beans. 3 cans seemed to be too much in comparison with the amounts of the other ingredients.

Chicken Curry I

Cinnamon Bread I

A moist and delicious quick bread. My only complaint is that the crumb topping fell to the bottom during baking. Next time I will add the topping towards the end of the baking time, which hopefully will prevent this. I also think I will add some chopped apple or raisins next time.

Cranberry Sauce

This cranberry sauce was fantastic. When cooked the cranberry sauce had a beautiful bright color. It was a perfect addition to the dinner table, and it was very quick and simple to make. Everyone in my family loved it.

Anna's Chocolate Chip Cookies

I was initially disappointed by the recipe. The cookies came out thin and not at all soft and chewy. I froze the remaining batter and baked some of it today. After being frozen, the cookies turned out wonderfully. They were soft, chewy and had a nice texture. I do not think that I would not rate them above the standard Toll House recipe, but they were very good.

Key Lime Cookies I

My husband is from Key West, and we both love the taste of key limes. This cookie reminded me of a butter cookie, but with a strong key lime flavor. When I prepared these I used freshly squeezed juice, which may have enhanced the flavor. Everyone who tried them loved them. This is perfect if you are looking for something a little different than the standard cookie.
