Beer and Soy Sauce Chicken

Very simple and very good. The chicken come off the grill very tender. I didn't use salt and used low-sodium soy sauce and it was just right.

Eggplant Tomato Bake

This recipe didn't turn out at all and I'm not sure what went wrong as I followed the directions. The eggplant was complete mush. Yuck. The tomatoes didn't hold up so well either. I dumped the whole batch. Too bad, because I love eggplant and hated to waste it. :(

Ronaldo's Beef Carnitas

Way good! I'll be making this one again and again, only I'm going to double up on the chiles and the seasonings. And I made it in the crockpot because I didn't want to heat up the house. Delicious and falling apart tender!

Dad's Spaghetti Western

Good, good stuff! I was going to make just regular old spaghetti, then decided last minute I wanted spaghetti with a test, so I found this! I want to stress that I DID NOT make this in the microwave, though I suppose it would be okay. I just thought it would taste better after simmering on the stove for awhile. The only change I made was using ground turkey rather than ground beef. Oh, and the sauce....do not leave off the sauce. The sauce makes this, in my opinion. Yum, yum, yum!

Fajita Marinade I

This is a nice, simple marinade. I used it with flank steak that I grilled after marinating, but this would be great with chicken or pork as well. A keeper!

Flavorful Beef Stir-Fry

Very good basic stir-fry recipe that you can easily alter to suit your tastes or ingredients on hand. I used Sherry as that's all I had and it tasted great. Also, if you like your dishes a little more seasoned-up, you may want to add some cracked black pepper and some red pepper flakes like I did. Very good and I'll put this one into my regular rotation.

Crazy Crust Pizza Dough

I made this out of necessity as I forgot to pick up refrigerated pizza dough at the store and I had no yeast to make regular pizza dough. I wish I'd just skipped it all together. This dough really has no flavor, even with the seasonings, and 20 min. was way to long to bake it. It was overdone and tough. Sorry, but my family just didn't care for this one.

Breakfast Cookies

These were different, but in a good way. I did decrease the sugar to 1/2c and I used dried cranberries rather than raisins just because we prefer them. Although all oven temps differ, I found that I only needed to bake for about 8 to 10 minutes. Just watch them closely!

Yummy! And they couldn't be easier to bake, and I don't even like to bake. LOL! The brandy really makes these extra-special, but I bet you do other liquers with great reslts. Amaretto would be delicious! Thanks for a great recipe!

White Bean 'n' Ham Soup

Ham & Bean soup is my husband's favorite, and I've never made it for him until yesterday when I made this recipe. This soup is divine! I doubled it as I wanted leftovers, and I bet it tastes even better today! Some changes I made; used chicken broth for half of the water called for, added some fresh minced garlic with the onions and carrots. I added a couple drops of hot sauce and simmered it for about 2 hours so all the flavors could blend. Thanks for a great recipe! And it's easy too!

My comfort food! My mom used to make these when I was a kid. I loved when we had mashed potatoes because I knew that meant the next night we'd get to eat these. We called them Potato Patties. :)

Parmesan Chicken

Good, with my changes. Heh heh. :) I used my own marinara sauce, then put about a cup or so of it in the bottom of a greased baking dish (you could use store-bought marinara). Then I took another's suggestion and baked them at 375 for about 20-25 min. then I sprinkled with some Mozzarella and baked for another 5 or 10 min. Served it on top of pasta with the extra marinara. Yummy!

Tomato Soup I

Such simple ingredients, but such big taste! Changes I made: I used a 14oz can of petite diced tomatoes and a 14oz can of crushed tomatoes as I like a smoother consistency. I also used half-and-half rather than cream, but I only used about 3/4c. And really, I think this is perfectly delicious without the cream. I also used regular chicken broth rather than the condensed and it was fine. Great soup for the colder months!

Black Bean and Artichoke Burritos

I was skeptical. While I love all these flavors, I wasn't sure how they would go together. It worked out great! I used refried black beans rather than regular black beans and green onions. I also add sour cream and then after they were all folded up I grilled them on both side in a skillet sprayed with non-stick. Very good, quick and simple!

Spaghetti With Red Clam Sauce

This was pretty good! I drained one of the cans of clams just because I didn't want it to "fishy". It came out great! My kids loved it even, but I had to tell them the clams were little pieces of chicken so they'd eat it. ;)

Chocolate Mayonnaise Cake I

This tasted really good. I frosted it with canned whipped chocolate icing. My only problem with this recipe is that it didn't make a very fluffy cake. It was kind of flat and dense, like a sheet cake. Don't know if it's supposed to be like this, or what happened. I followed the recipe to the letter with the exception of using cake flour, but one would think the cake flour would make it more fluffy. So 4 stars for the taste, but had to subtract one for the texture.

Skillet Balsamic Chicken

Ugh, this is way too much vinegar. And I even cut down on it after reading others' suggestions. I had high hopes for this recipe as I love Balsamic. All is not lost though....I want to experiment with this and instead of using red wine vinegar, make a brown butter/balsamic sauce. This recipe has some potential, but as it stands, it's way too wangy.

Chicken Salad Wraps

I thought these were only okay, but I have to say, my husband thought they were great! Great use for leftover chicken, which is what I used. And I wrapped them in foil and put them in the oven for a few minutes, as suggested by another reader. I also added a bit of shredded cheese. Next time I'll use sour cream instead of mayo, and green onions.
