Parmesan Potato Wedges

Since I was already baking chicken in the oven, I decided to bake these rather than risk soggy potatoes. I covered them and baked them for 30 minutes before uncovering them and baking them another 30 minutes. They were done, but not crispy. Next time I would not cover them at all, and maybe put them on a baking sheet instead of a pyrex. Good flavor, not gritty as some people have said, and these would be perfect dipped into a garlic sour cream dip. For some reason they didn't taste that good with ranch or ketchup.

Garlic Cheese Chicken Rollups

This was so easy to make, and was declared 12 out of 10 stars! I used cream cheese, mixed with fresh chopped garlic and dried chives instead of the cheese the recipe asked for. I cooked it for 50 minutes and it was done perfectly.

Chili Potato Burritos

These burritos seemed dry inside and very dense and heavy. While the taste was okay, it seemed almost dry to me. If I make this again, I would rather do the potatoes differently. I think next time I would cut them into small pieces and bake them (covered) with the spices to cook them. Then I would put together the potatoes and cheese in the tortillas, but keep them on the smaller/lighter side. It also lends itself to adding other things, like beans, onions, olives, etc.

Spicy African Yam Soup

I think I put too much peanut butter in, which ruined it for me. I doubled it, and wished I hadn't. If I try it again I think I'll keep PB the same, get hot salsa instead of medium or add some hot sauce to it!

Party Pinwheels

These are my favorite pinwheels, so addicting! Instead of using a Ranch packet, I use the same amount of seasonings used in the Ranch Dressing II from this site (just omit the mayo and sour cream).

Chocolate Surprise Cupcakes

I was surprised the batter didn't have any egg in it, I had to go through the ingredients twice because I thought I was forgetting something. This makes a lot of batter though, I had probably 30 cupcakes worth even after filling them almost full. It tasted great, just like a cupcake with cheesecake baked in it. So if you want something lighter or creamier, this recipe is not for you.

Lemon Horseradish New Potatoes

I mixed all of the dressing in a bowl before I added the new potatoes, which I had quartered. I also added an extra tablespoon of horseradish. If I make this again, I'll decrease the amount of butter, I think it had a little too much.

Slow Cooker Lentil and Ham Soup

I too added the whole can of tomato sauce, but omitted the water. I ended up adding some more water when I reheated it the next day. Very good soup, would probably try again without the ham too!

Korean BBQ Chicken Marinade

I marinated chicken drumsticks in this for 24 hours, then barbecued. I basted the chicken often with the leftover sauce which was simmering on the barbecue.

German Potato Pancakes

This sure yields a lot of pancakes--makes me wish I had used a bigger pan to go faster! These are great food a treat once in a while, otherwise they're a little to greasy for everyday dinner.

Artichoke Spinach Lasagna

This was a fantastic recipe! No one minded there was no meat in our meal. I substituted basil for the rosemary too. I also used more feta cheese in there too in each layer. Next time I'll add kalamata olives, I think that will make it even better! Because there's so much liquid, I didn't cook the noodles either, which makes it a one-pan meal! Update: Made this last night using hearts of palm instead of artichoke hearts, and goat cheese instead of feta. Best one I've made yet!

Artichoke & Spinach Dip Restaurant Style

I liked the idea of this recipe because I could use the alfredo sauce in my pantry I was never going to eat, and because it didn't use mayonnaise! I added two extra cloves of garlic, and it was very good.

Addictive Sweet Potato Burritos

My new favorite recipe! I made only 6 servings, and still had a lot of filling leftover. I'll use the leftover filling to make quesadillas or empanadas later this week. Next time I make this, I'll add cilantro too.

Apple Crisp II

I made this with 8 apples, and it was still way too much for my 8x12 pyrex. I ended up putting leftover apples in a smaller one and baking two pans of it. Otherwise, great taste especially with vanilla ice cream!

Peanut Butter Pie I

When I made this, I was sure it wouldn't turn out. The peanut butter mixture looked so thick, like cookie batter, but when I put in the whipped heavy cream it really mixed in well. It was so light, and I topped it with chopped up mini peanut butter cups. It does get warm really quick though, so next time I might pop it in the freezer for an hour beforehand.

Creamy Mashed Potatoes II
