Coconut (Haupia) and Chocolate Pie

Very good and very easy. The chocolate layer was just like chocolate pudding, where the coconut layer was a little bit more firm. A interesting texture in a pie, but it tasted great.

Easy Broccoli Quiche

This didn't work as well as I had hoped. I used fresh broccoli, and reduced the milk to 3/4 of a cup. Still too much liquid, even after letting it sit for 15 minutes. I'll try it again, but with less milk.

Banana Pumpkin Bread

I like this a lot more than plain banana bread. But, I thought it had a little too much cinnamon in it, considering it's in the pumpkin pie spice and as a separate ingredient. I'll just stick to the pumpkin pie spice next time, and not worry about the extra cinnamon. I also forgot the raisins, but I liked it without.

Soba with Toasted Sesame Seed Sauce

I made this based on the beautiful photo, but mine did not look like this! I should've gone with my gut instinct, this had way too many noodles. I should've used half the amount. I'll try it again using less noodles, and I'm sure it'll be better. I added tofu, but next time I'll add chopped carrots too.

Cornbread Muffins I

These were excellent right out of the oven and the same day as baking. However, once they get microwaved they aren't as good. The corn gets really chewy, not a good thing.

Pumpkin Chocolate Chip Cookies III

This was a very wet batter, it was hard to form the cookies but after letting it sit out for a bit the dough became manageable. The cookies are very cakey, not dense like a chocolate chip cookie. They were delicious, just not what I expected!

Rice & Beans (Haitian Style)

This was an excellent recipe, I loved the addition of cloves--I would've never thought to do that. I also used an habanero, and used a lot less salt than the recipe asks for. I'll make this again for sure!

This was a hit! Super simple and I had all the ingredients on hand. This also worked well on BLSL chicken breasts and on flank steak! I'll use this recipe a lot!

Banana Crumb Muffins

Very tasty! If I make these again, I'll make 12 smaller muffins instead of 10. The topping melted off the muffins and made them really hard to remove from the tin and unattractive. Follow your gut though, don't try to shove them in 10 muffins if they're going to be huge!

Grilled Potato Wedges with Malt Vinegar-Tarragon Dip

This is a really great recipe for the dip! Watch the vinegar though, because it quickly goes from reducing to being burnt sludge on the bottom of the pan. I love mayonnaise, but next time I'll make it a little healthier--1 cup mayo and 1/2 cup fat free sour cream.
