Good Old Fashioned Pancakes

MMMMM... Brownies

Be sure to let the chocolate mixture cool or temper the eggs, or you will get cooked eggs in your mixture. I baked these for 30 minutes and they came out perfect.

Baked Tofu Bites

I too was hoping the texture would be a little different. I'll give this another try, but I'm going to stir fry the tofu first until it's crispy, then add the sauce in until it thickens. I'll also add fresh garlic and more hot sauce.

Real Welsh Rarebit

If you don't have beer, don't make this recipe. It's not the same without it! This was a great recipe. The better the cheese you use, the better it tastes. Use a nice aged sharp cheddar, it makes all the difference.

I used about half of the cayenne that the recipe called for and it was the perfect heat for me. I served it over quinoa. Even though I diced my potatoes small, it took almost an hour for them to cook through.

This is quickly becoming my go-to side dish. It's fast, inexpensive, and healthy! Plus, it's a lot easier to make than rice, I've never messed this up.

The flavor was good, but there was way too much liquid in this. I'd reduce the water to 1 1/2 cups, and use broth instead of water.

Pumpkin Gingerbread

Hands down my favorite pumpkin bread/gingerbread recipe ever. It took longer than an hour, almost 15 minutes more. Check the bread in both pans with a toothpick to make sure it's ready!

Very good, but I prefered the Cajun Style Baked Sweet Potato recipe a little bit more. This also needed salt (I didn't use the poultry seasoning, maybe that's why?).

Spicy Black Bean Cakes

I too added another egg, and used panko instead of the bread crumbs. I used both the broil method, and I also baked another batch at 400. Next time I'll use the food processor to combine the jalapeno and sour cream for the dip so it's a bit smoother.

Coconut (Haupia) and Chocolate Pie

Very good and very easy. The chocolate layer was just like chocolate pudding, where the coconut layer was a little bit more firm. A interesting texture in a pie, but it tasted great.

Easy Broccoli Quiche

This didn't work as well as I had hoped. I used fresh broccoli, and reduced the milk to 3/4 of a cup. Still too much liquid, even after letting it sit for 15 minutes. I'll try it again, but with less milk.

Banana Pumpkin Bread

I like this a lot more than plain banana bread. But, I thought it had a little too much cinnamon in it, considering it's in the pumpkin pie spice and as a separate ingredient. I'll just stick to the pumpkin pie spice next time, and not worry about the extra cinnamon. I also forgot the raisins, but I liked it without.

Soba with Toasted Sesame Seed Sauce

I made this based on the beautiful photo, but mine did not look like this! I should've gone with my gut instinct, this had way too many noodles. I should've used half the amount. I'll try it again using less noodles, and I'm sure it'll be better. I added tofu, but next time I'll add chopped carrots too.
