Unbelievable Chicken

These went over very well, I got two thumbs up! I'll keep this one to use again. I barbecued them on low for almost an hour, they looked great too!

Mock Lobster

This seemed to go over well, but no one seemed to think it was lobster or tasted anything like lobster. I marinated chicken breasts for 24 hours before putting them on the grill. I used leftovers to make chicken salad wraps for lunches.

Brooke's Best Bombshell Brownies

These were good, but oh so sweet! I baked them for 45 minutes because they seemed soft in the middle. In the end, they were a bit hard around the edges. I think I'll try a few of the other brownie recipes next!

Savory Grilled Potatoes

These were surprisingly good! I used peeled and diced red potatoes and used dried parsley instead of fresh. They were perfectly creamy and not one bite leftover!

Bow Tie Cabbage Salad

What an adaptable recipe! It would be so easy to throw in extra veggies, olives, etc. I wasn't sure how the dressing would come together as the ingredients were a bit different, but this came out a lot better than I thought it would! I think I'll even make the dressing again to use on a tossed green salad.

I made this with a graham cracker crust instead of buying store bought. This was a great, refreshing summertime dessert! I think the more zest added, the better the flavor is! I've already made it twice in one week!

St. Louis Toasted Ravioli

I used tortellini instead of the ravioli and also baked them as someone suggested. Sure, not quite the same, but no frying and healthier for me. I baked them (from frozen) for a total of 30 minutes, flipping them all after 15 minutes. Next time I'll do 20, because 30 minutes was too much. They don't need to be browned, because the cheese just needs to be hot. 30 minutes later they were a tad hard/crispy.

Lemon Lentil Salad

What an awesome recipe! Mine was not mushy at all, I think it depends on what type of lentil you use. I used black beluga lentils, but I think red chief cooks pretty quickly (which might have been the previous reviewer's problem). I added an extra clove of garlic, and next time I'll sub one tablespoon of olive oil for another tablespoon of lemon juice. Refreshing, adaptable summer salad that's a great way to get folic acid and protein!

Glazed Meatloaf I

I don't think this came out quite as good as the Brown Sugar Meatloaf on this site. It still came out well, but seemed a bit soggy in the end. Maybe it needs time to set up afterwards or more bread? As a side note, I did use three slices of multigrain bread that had nuts in there, which seemed to add an interesting texture/appeal to it. I would try this again, just use more bread or bread crumbs next time.

Black Bean and Salsa Soup

I really didn't think this would turn out so great! It's so easy, I even used fresh beans I had made the day before. In addition to the cup of salsa, I also dumped in there some chopped onions and cilantro I wanted to use up. To top it off, fresh green onions and a little cheese went great! Next time I'll add a few slices of avocado too!

World's Best Lasagna

I didn't cook/soak the noodles at all, I just assembled the day before. I put it in the fridge so it did take a little longer to cook through than stated, but overall a great recipe.

Amish Macaroni Salad

This was great--even though I didn't have any red pepper in the house. I think sliced green olives would be good mixed in too. For people who like tuna, this would be good with tuna mixed in too for more of a meal or lunch idea.

South African Yellow Rice

This is really good, but it is too sweet. I'm going to try it again, but next time with less sugar because it was too sweet. Maybe with brown sugar? Half brown, half white? I served it with spicy beans and that helped to balance it.

Coconut Muffins

I doubled the recipe and this made 18 muffins that rose A LOT (take a look at the amount of baking soda!). This made a really thick batter, so thick I checked my measurements again thinking for sure I had left out something! The muffins turned out really dense and cake like, not what I was looking for at all. It was almost like I made a biscuit recipe and put coconut extract in it, and not enough of it at that. The topping looked great, until I added the warm butter to the mix, then it was a blob of sugar. Leave the butter out, and sprinkle it on top instead of deal with a wet sugary mess! I'll keep looking for a coconut muffin recipe.

Peri Peri African Chicken

What a moist chicken this made! I used boneless skinless and had to used powdered ginger, but this turned out better than I expected. I marinated for 24 hours in the fridge. Very fragrant and great presentation!
