About this Cook
I'm a happy "barefoot and pregnant in the kitchen" sort of wife! I've been married since October 2007, and just recently found out I am pregnant. My husband is from Mexico, I am from Tennessee, and we have a great time blending our backgrounds...especially in the kitchen!
My favorite things to cook
Mint brownies, chicken pot pie, apple pie, caramel corn, blueberry muffins, sausage biscuits and gravy, any of my mom's recipes, Mexican food (prepared traditionally, of course!)
My favorite family cooking traditions
I grew up eating the same amazing christmas cookies every year, along with the same holiday recipes for Thanksgiving, Easter, etc! Now I find ways to make the same recipes all year long for my family and friends.
My cooking triumphs
Cooking for and organizing parties of 40+ people...
My cooking tragedies
I tried to bake a simple pumpkin pie when I was living in Virginia one summer...something was off, because my pie crust was always too sticky, no matter what recipe I tried (humidity?), and I added too much salt by accident to the filling! Needless to say, my baking was sadly kept to a minimum for those three months.

Cathy's Banana Bread
Awesome recipe! I grew up eating my b.b. with cream cheese spread over it... Add in 3/4c of mini chocolate chips for a great dessert.

Toasted Garlic Bread
I use 6 tbs butter, and crush the garlic coarsely by smashing with the blade of a knife and then chopping it up. Adding the cheese really makes it even better! i will never use another garlic bread recipe!

To Die For Blueberry Muffins
unbelievably good! i always add 1 tsp vanilla extract to the batter, before adding the blueberries. makes a lot of topping. good for mini-muffins, too!
