Quinoa and Black Beans
This is yummy, light, and refreshing. Just what I need for a healthier lifestyle and to help me on my fitness journey. To make it more substantial, I had added Chipotle lime chicken pieces for lunch. This time making it without chicken, I juiced less than half a lime to the broth (I used chicken broth) for it gives the salad a nice tang to the spices and sweetness of the corn. I have made this recipe twice so far for my weekly lunch meals.

Quinoa Black Bean Burgers
Even cooking noobs can do this. The burgers completely held together during the forming of the patties and cooking (I use a nonstick pan). The texture was nice: the outside was crisp and inside smooth and tender; there was no oozing/squishing action as you bit into the burger. On its on, the patty tasted of cumin which I wasn't very fond of so next time, I'll play with the spices. But it's a small complaint because topping the burger with cheese and ketchup helped with the flavor anyway. Overall, the burger is delicious, satisfying, and filling. I mostly followed the recipe except instead of breadcrumbs, I used 1 cup grounded rolled oats in order to absorb excess moisture which allowed for the veggie burger "dough" to come together in a "dough" ball.

Banana Banana Bread
Yummy! The banana bread is dense, moist, and so delicious! I'm having a difficult time controlling myself from eating the whole loaf, seriously! I used around two cups of overripe bananas (about 4 medium-large sized ones), and substituted the baking soda with 4 tsp of baking powder since I didn't have any baking soda on hand. I don't know if the baking powder makes any difference but the end result was phenomenal anyhow. The bread turned out a tad wet but in my book, that's a pro in my case. I love the texture and taste. Will definitely make again.
