Sausage Hash With Apples & Sage

Edible. My husband said it should get 4 maybe 5 stars. He really liked it. I would have given it 1 star. I compromised and gave it 3 stars. I didn't care for the sauce. I liked the apples/potato/sausage/sage combination though. I will keep that but experiment with other sauces though. Using butter instead of oil would probably make a huge improvement on this.

Irish Shepherd's Pie

Just sort of made this recipe. I couldn't follow the directions exactly simply because we have a dairy allergy and an onion allergy. So I skipped the butter and onion in the stew. Then because mashed potatoes just aren't the same without butter and milk/cream and we cannot use the cheese I chose to dice the potatoes and add them to the stew. For some more color I also added in some sliced carrots. So basically lamb stew.

Cream Cheese Frosting II

I made this today. It wasn't runny at all. Even though I added in 1/2 can of Solo apricot filling it wasn't runny. I did do as one poster mentioned and used my butter and cream cheese right out of the refrigerator. Maybe that is the difference between perfect frosting and runny frosting. It isn't cloyingly sweet either. Usually I scrape off the frosting and then eat he cake with a minimum of frosting. No need to do that with this frosting. Other than the apricot filling I didn't make any changes to this recipe.

Egg Noodles

I gave it 4 stars because everyone liked them. I did not give it 5 stars because it is seriously lacking in salt. I had to add salt to it and I am not a huge salter. I tend to under do the salt figuring others can add at the table. This was too bland even by my standards. It depends heavily upon the food that covers it. I think either I will try it again with more salt. If it is still bland I will look for simpler recipe. For something so bland I would prefer not to waste so many ingredients.

Cream of Mushroom Soup II

I loved this soup. I made this a few weeks ago when my sister was visiting. This week I was fortunate enough to find mushrooms on a really good sale. I bought 12 lbs of mushrooms. Yes that is not a typo. I did buy 12 lbs of mushrooms. So trying to think of a way to use them before the went bad I thought to make this soup as it was such a hit last time I made it. I now have 3 gallons of mushroom soup. I still have 6 lbs of mushrooms left. I plan on making another pot of soup. Then I will freeze what is not eaten for dinner tonight. I did make some changes. 1)I omitted the onions as I didn't have any. 2)Then I sautéed some celery with the garlic. 3)I didn't have any thyme as I forgot to replace it so used basil and parsley. Yes it was dried as I do not have cheap access to fresh. I did use thyme the first time so can attest to it tasting just as good with thyme. 4)I used 2 1/2 times the recommended amount of flour as I prefer a thicker soup. 5)I omitted any and all broth. I pureed the stems in an equal amount of water and used this instead for a more mushroomy flavor. It also saves money for the thrifty among us as it doesn't cost any extra. I think other than the increased cook time, which I attribute to my multiplying the recipe by 6, I didn't change anything else.

Carrot, Potato, and Cabbage Soup

We loved this soup. I will definitely make it again. I did make a few changes to accommodate our needs. I skipped the onion and substituted celery. My husband is allergic to onions so this is not a recipe complaint but a health issue. I also added smoked sausage. The reason I gave this recipe only 4 stars is because it has no protein. Without protein it isn't a complete meal. It really only serves as a side dish.

Bar-B-Que Sauce

Tried this today. We loved it. After making the sauce I cooked up meatballs in the sauce and served it over brown rice. I didn't make any changes to the recipe. I am not sure I will but maybe in future I may take some of the suggestions just for a change of pace.

Homemade Sloppy Joes

I tried this recipe for lunch today. Yes it is sweet. In future I may cut back on the sugar. Not totally sure though as my husband and children prefer sweet. I did make some changes. I did not have time to mince the peppers so skipped them. Otherwise my husband would not have eaten. He is allergic to onions so those were left out as well. I used precooked beef already seasoned. I also used powdered garlic instead of fresh for the time factor. In future I will use fresh as I prefer fresh garlic. I almost forgot to add I used bolillos instead of hamburger buns. As they are a bit chewier I chose to scoop out the center to help the meat stay put. Then I thought to cut short the simmering time and add the scooped out bread to thicken it. This way I did not waste the bread. Whether I do this again depends on the bread I use. If I use regular hamburger buns I will not. If I use chewy bread or rolls than I think I will as I like the way it turned out.

Broccoli Soup

Loved the recipe. It is very similar to an old potato soup recipe I made when first married. Yes as a previous reviewer stated the nutmeg isn't for a nutmeg flavor. It is to enhance the other ingredients. I makes a world of difference in the final outcome of the whole recipe. I did make changes to the recipe for 2 different reasons. 1 is allergies. The other is available ingredients. I skipped the onions because my husband is allergic to them. I also skipped the broth. That was because I didn't have any on hand. Because of that I increased the amount of broccoli by 4 ounces to make sure of plenty of flavor.

Old Fashioned Chicken and Dumplings

I made the dumplings in this recipe. After reading the reviews and reading the recipe it looks like a step was left out. The recipe does not say how much flour to reserve. Based on other recipes I would say 1/2 cup for the broth and 1 cup for the dumplings. Those that are saying it is crumbly likely used the whole 1 1/2 cups of flour. If you cut the flour in the dumplings they should not be crumbly or dry. For the poster who said boiling chicken results in dry chicken. Dry chicken is a result of over cooking not the method of cooking. Roasting a chicken can result in a dry chicken if you roast it too long. I know because I have done that in the past. Now for the recipe. Basically I am only reviewing the dumplings as I already have my own chicken stew recipe. I gave the recipe 4 stars primarily because one step is left out making the recipe confusing. I did make a change as my son has dairy allergies. I used chicken broth instead of milk. As my son can tolerate butter I used that. Next time I plan on using solid chicken from making broth. I will have to remember to save it though.

Chicken In Coconut Sauce

Loved this recipe. I was looking for a creamy sauce I could serve my son. He cannot have dairy. This was perfect. I had the ingredient on hand so didn't have to run out for anything. I did add a bit of chipotle powder but just a bit as I didn't want to make it to spice for my toddler. I think that was all I changed. We used the meat and sauce to make a chicken wrap. We filled the wrap with sweet peppers, cucumbers, lettuce, tomatoes, and avocados. My kids were both asking for more.

Colleen's Slow Cooker Jambalaya

LOVED it. I made this on the stove top. I left out the celery and chicken broth because I didn't have either. I also didn't have the shrimp. I also thickened it up a bit with some flour. I can't comment on authenticity as I have never had jambalaya before.

Spinach Artichoke Hummus with Roasted Red Peppers

I doubled this recipe and made around 14 cups of hummus. I cooked my own garbanzo beans with garlic. So instead of adding garlic later I just used the cooked garlic. Instead of the water I used the liquid the beans were cooked in. I also used tahini instead of the toasted sesame seeds. I also used frozen instead of fresh spinach because of the already high costs of the ingredients. I can get 10oz frozen spinach for $1 at the local grocery store. I dumped all of the ingredients into the blender and blended until smooth. My children and I love it.

Baking Powder Biscuits

My family loved the biscuits with sausage gravy. We were even able to make them dairy free. My son has dietary restrictions so we were really happy to be able to make this for him using almond milk instead of regular cows milk. Now he won't be missing out when every one gets biscuits and gravy.

Grain and Nut Whole Wheat Pancakes

I know some people don't like it when others review recipes they have adjusted. But since I feel a truly good recipe can be adjusted to accommodate many different preferences here is my review. I LOVE this pancake recipe. I have tried many different whole wheat pancakes I have liked but this one I love. I did add 2tsp of cinnamon and vanilla. I also increased the sugar for my kids from 1/3c to 1/2 c. I subbed applesauce for the oil and used only buttermilk. I also left out the nuts because my son doesn't like them. Although I would love them so maybe next time I will add them. I forgot to add I never grind the oatmeal to much to bother with. This has never presented a problem in this recipe or any other breads I have made using oatmeal. Update my son has developed a problem with digesting dairy. We were able to make these pancakes by making the following changes. I used 1 Tbsp of baking powder instead of the 2 tsp of baking soda and 1 tsp of baking powder and used almond milk in place of cows milk and buttermilk. We still loved them just as much. It did however take a bit longer to cook. Because I was able to adjust the recipe to accomodate our dietary needs and still remain tasty I feel the recipe deserves 10 stars.

Whole Wheat Blueberry Pancakes

I added vanilla and cinnamon as suggested in another review. I added 1/4 c more milk for a thinner pancake. I also left out the blueberries as I didn't want my sons face stained blue before Sunday bible study. I gave four stars. They were light and fluffy. But I think they would have been lacking in flavor without the vanilla.

Chicken-Parmesan Bundles

Thank you for the great recipe and the boost to my confidence. I have never tried a recipe that called for rolled stuffed chicken. I have also never cooked with spinach before. It turned out great. It tasted wonderful and looked great. I did however use an alfredo type sauce instead of a red sauce. I served it along side of a quinoa pilaf. After such great success with this recipe I am now going to try chicken cordon bleu. I have always been to intimidated to make it before. I will also make more use of spinach a much neglected food in my house. Thank you so much.

Old Fashioned Apple Dumplings

Wow this was really good.My whole family loved this.Other than using a bigger roasting pan to bake the apples in I made this as directed. The bigger pan allowed more of the apples to stick out than other people were saying. We really liked it this way. I don't think I would baste the apples while cooking. I meant to baste them as some people suggested but forgot to. The homemade pie crust was very flaky and was sweetened just right with the sugar in the apple center. This was my first time making or eating apple dumplings. I sure have been missing out on a lot. My kids loved helping me make this. They peeled the apples for me while I made the pie crust. It wasn't very pretty but will,I think,improve in looks with practice.
