German Apple Pancake
This was delicious. I made only two changes to the ingredients themselves: I used 3 1/2 apples, peeled & sliced, instead of just the 1, and I used 1/4 cup vanilla/sugar in place of the regular sugar when sprinkling on the apples. I have a real "argument" with the number of people this is supposed to serve. Really - 4 people??? My husband & I polished this off for supper - just the two of us. But I guess that says more about my husband & me than it does about the recipe. Again - wonderful recipe! Delicious & perfect!

Unstuffed Cabbage Roll
My husband and I absolutely love this recipe. I have made it twice now in as many weeks; it's just impossible to get tired of it. When taste-testing it, I decided to add several Tbsp. of brown sugar to counteract the tomatoes, one shredded carrot (just because), and used 3 cans of tomatoes in place of the water/tomato sauce (because I didn't have any sauce). I left my chunks of cabbage a little larger than shown in the photo so, obviously, had to cook it a bit longer. It is so easy to put together and tastes so good...I'm delighted to add this new recipe to my list of "Favorites."

King Ranch Chicken Casserole III
I followed the recipe exactly, except I halved it & I omitted the garlic salt entirely. I didn't have a problem with the casserole being too soupy or too soggy. It looked great. My problem was that it was so salty neither my husband or I could eat more than a few bites. Since no one else here seems to have had that particular complaint, I wonder if the chicken broth I used was abnormally salty. There would have been enough leftovers for another meal, but we ended up throwing them away since we couldn't eat it the first time. I would like to try making it again, but I will use salt-free or salt-reduced ingredient next time.
