Seminary Muffins

Made these for a friend. the only change I made was to use blueberries instead of chocolate chips. They were good - but not great. They were gummy, the way that baked goods are when you substitute apple sauce for oil. I won't make them again.

Cottage Cheese Chicken Enchiladas

These are phenomenal. My husband is not a huge fan of cottage cheese, so I now I make these without the cheese mixture. So easy and it makes enough for two dinners for us, so I freeze one for an easy dinner later. Great!

Cheesy Ham and Hash Brown Casserole

Delicious! I doubled the amount of ham and added onions, but other than that followed the recipe exactly and it was perfect! Will definitely make again!

It's Chili by George!!

Made this for the superbowl - the bottom of the pot was scraped clean! Definitley a keeper. Like others commented, I did not use tomato juice and instead used canned tomatoes. Delicious!

Best Big, Fat, Chewy Chocolate Chip Cookie

Truly amazing cookies! I made a batch without chocolate chips and instead used crushed heath bars - out of this world! I did refrigerate mine overnight and they came out puffy and chewy - just the way I like them! So much better than flat cookies!

Sugar Cookie Icing

If your icing turns out splotchy, you need to stir your icing more to dissolve the powdered sugar more. This recipe tasted good, but for better artistic ability, I think I will use royal icing next time.

Coffee Butter Frosting

Excellent frosting recipe, althought it did not have as much coffee flavor as I had hoped (and I doubled the chocolate and tripled the coffee amounts). Next time I think I will add espresso instead of coffee. I quadrupled the recipe for a 9 inch layer cake and did not need that much - even with decorations, I ended up with a lot of frosting left over. I would recommend tripling the recipe for a layer cake.

Awsesome cake. You do not really taste the coffee in the cake - it just further enhances the chocolate flavor. If you want more coffee flavor, I would try adding espresso instead of coffee.

Nanaimo Bars III

Definitely make half of the bottom layer. I also used the instant vanilla pudding and regular milk instead of the heavy cream. They turned out wonderful - just like the ones I had on Salt Spring Island!

Fabulous cookies!! These are the absolute best if you love soft peanut butter cookies! I added frozen reese's mini peanut butter cups that i cut in half and I used natural crunchy peanut butter. Next time I will make a double batch!

Banana Sour Cream Bread

My husband told me this was the best banana bread I had every made - a perfect 10. I did add about a teaspoon of nutmeg and ground cloves, but otherwise followed the recipe exactly. It is wonderful!

Charleston Shrimp 'n' Gravy

These were amazing! I followed the recipe exactly and the flavors were amazing! This was my first-time to make a roux and it was really easy. This was my mom's first-time to eat shrimp n grits and she loved them. So did my husband who is a shrimp n grits conneisuer - he said this should be our new recipe for when we have company over for dinner! I served this with the creamy cheesy grits recipe also on this website.

Creamy Cheesy Grits

These were amazing! The only changes I made were to use vegetable broth instead of the chicken (was feeding a vegetarian) and I eliminated the nutmeg. I served these with the Charleston Shrimp n Gravy also from this website. A Mother's Day Meal to die for! My mom and mother-in-law both had seconds and my vegetarian father-in-law couldn't go on enough about how great the grits were!

Emily's Famous Chocolate Shortbread Cookies

Good cookies. I did as others suggested and used extra cocoa and less flour. Cookies turned out great - I used a combination of flour and cocoa to dust them with when I rolled them out. I used fudge icing and they tasted almost like brownies.
