Morning Glory Muffins I

I was very surprised these were so good. The changes I made were to substitute 1cup of applesauce for the apple butter and vegetable oil, to use 1/2 craisins and 1/2 raisins, and to use muffin cups. Next time - I will use ALL craisins and will NOT use muffin cups (they stuck). I will definitely be making them again!

Buttermilk Oatmeal Muffins

These were good - I added a tsp of vanilla and added chocolate chips. I think they would have been a little plain without those - but they are quite good with them.

Fresh Rhubarb Bread Pudding

So good! I am so excited to have found this great recipe to use my rhubarb in. I made it exactly as the recipe shows - except I didn't serve with cream. Tried it both warm and cold and it was fabulous both ways. Love it!

Pepperoni Stuffed Mushrooms

These were a hit! I had enough stuffing to make about 3 times as many mushrooms. Next time I'll buy more mushrooms to use. I also sauted the mushrooms before stuffing as someone else suggested. And added a bit of cheese on top. GREAT!

Asian Roll Lettuce Wrap

FABULOUS! Didn't change a thing with the recipe. I also had some chow mein noodles, crushed peanuts, and shredded/cooked carrots for topping. I will definitely be making these again!

Broiled Tilapia Parmesan

AMAZING! Neither my husband or I are big fish eaters, but are trying to add some in due to the nutritional value. When I served this, he said, "This is better than chicken"... I will definitely be making this gain. I cut the sauce in half, which was just about perfect for 2 fillets.

Roasted Red Pepper Cream Sauce

I used a jar of roasted red peppers and fat-free half and half...so maybe that made a big difference... But the sauce came out a bit chunky and the flavor just wasn't great. I won't make this again and will probably end up throwing the sauce I froze.

Chicken Enchiladas II

Awesome -- I used ground turkey instead of chicken and added some onion and taco seasoning to the turkey when I browned it. I even used fat-free sour cream and low-fat cheese and it still tasted great!

Burrito Pie

I cut the recipe in half (and fed 7 people), added taco seasoning to the meet, and spread the beans on the tortillas instead of mixing them in. It was very good, but didn't taste more exciting than a quicker Mexican dish might. Makes me wonder if the people giving this 5 stars don't eat Mexican often? And it is DEFINTELY NOT HOT...

Baked Pork Chops I

The sauce is great! I served over egg noodles, and used DOUBLE the sauce (and could have had more)...so make extra! Also, I didn't think the breading added much, I will skip that next time.

Classy Chicken

I had to substitute red wine for white and stewed tomatoes for sun-dried... I would use less dill next time, and maybe add mushrooms like others recommended. My sauce was very thin. It was good...but nothing spectacular.

Brown Sugar Meatloaf

I changed the recipe for one l lb of meat, used a little less milk and more crackers as others suggested, and put a bit of the sauce on top. It was amazing - my husband swears his moms meatloaf is the best in the world and he rated this one above hers!

Garlic Chicken

After reading the reviews, I was very surprised to find that this recipe was good, but nothing special. I added extra garlic and extra cheese, along with some other spices to give it more flavor...and it was still very bland. Not worth the effort.
