Chicken Lasagna IV

This turned out prety darn good. I did make a few changes. I sauteed mushrooms and onions and placed them ver the chicken and cheese when layering. I also left out the mayo and replaced with ricotta cheese. This is one of those dishes that is way better the next day ~ as the favors all *soak in*.

Sausage and Rice Stuffed Peppers

This recipe turned out really good. I didn't boil the peppers first, however. I stuffed them and baked them at 350 degrees for about 45 minutes. Rather than using sausage, I used ground beef. Couldn't have turned out any better!

Restaurant-Style Coleslaw I

Outstanding! The ONLY way cole slaw should be made, according to my family! I bought the prepackaged slaw mix and ran it through the food processor a tad bit just to get it minced a little better. I used buttermilk throughout the entire recipe rather than plain milk. Delicious!

Barbecued Beef

This bbq was so good!! I put my roast in the crockpot, sprinkled with some seasonings, put in an envie of Lipton's Beefy Onion dry soup mix, and added some water. Cooked on high for 5 hours and then shredded. After shredding, I added all of the sauce ingredients and cooked on low for an hour. To the sauce, I added some honey and used regular mustard rather than Dijon. Perfect!!!!!

Oven-Roasted Vegetables

Delish! I was trying to use up a few extra veggies I had and thought to roast them. I only used roma tomatoes, green peppers, and red onions ~ oh, plus, some fresh garlic tossed in with the olive oil. Fantastic!

The Supreme Shepherd's Pie

I've been making this for over a year now and we LOVE it! I cook my roast in the crockpot on HIGH for 6 hours (so it falls apart). Once shredded, I place it on the bottom of the baking dish. I saute onions and mushrooms and place that over the beef. Then the mashed potatoes go over that. Topped off with the juice from the crockpot pot. Delish!!

Pork Chops for the Slow Cooker

The family seemed to enjoy these tonight. I didn't eat any, therefore, I can't give my own personal opinion. I ran out of ketchup, so I used a small can of tomato sauce. I also used Teriyaki sauce rather than soy sauce. Everyone cleared their plate tonight!

Li'l Cheddar Meat Loaves

Awesome! These were a huge hit tonight! My husband and non-meatloaf lovin' daughter claimed these were WAY better than traditional meatloaf. They really were outstanding and held together wonderfully. I didn't have oats so I used breadcrumbs. I'll make these quite often, I'm sure!

Baked Scalloped Potatoes

These turned out great this time. I had made them about 2 years ago and wasn't fond of them (based on my review, LOL) .... I made them again this past week and we really did like them. I also added some shredded cheddar cheese.

Eileen's Meatloaf

Wonderful Meatloaf! Very flavorful and held it's form beautifully. I used beefy onion soup mix rather than just the onion. Also ran out of Parmesean cheese so I left it out. I topped mine with a glaze of ketchup, mustard, honey and brown sugar. It would be great with spaghetti sauce over the top, as well. Served with baked potatoes and corn for a wonderful dinner!

Steak Mix-Up

Wow! This was so easy and super yummy!!! A huge hit with my family! Several others complained their meat was tough ~ here's what I do to get tender sirloin every time ~ saute the sliced meat with fresh garlic and whatever seasonings you like, brown it for a few minutes and then add 1 cup of water, 1 tsp. beef bouillon, 1/4 cup Coke (yes, Coke)! Cover and cook on medium-low for about 15 minutes! Once I did this, I added the onions and green peppers ~ covered and cooked for about 10-15 minutes longer. Meanwhile, I stirred 1 can of diced tomatoes into the cream of mushroom soup. Then pour into skillet and heat through. I didn't even need to add the milk! This recipe was fantastic!

Frosted Banana Bars

I had a craving for something with bananas that would cure my sweet tooth. I made these tonight and they turned out great! Just what I needed to clear the fog from my brain, heehee! I do think that next time I made them, I'll add some cinnamon into the mixture. They seemed to be lacking in a little something or other and I think that would do the trick for me. Very good!

Delicious Ham and Potato Soup

Jackpot! :o) This soup was woooooooonderful tonight! I followed the recipe exactly as stated (except left out the celery ... icky stuff) and it turned out beautifully! I was quite proud that I made a soup so good ~ even called my Mom to brag about it, heehee! This would be wonderful even with the ham left out ~ as the base and consistency is of a perfect potato soup! Will make often, I'm sure! Served with BLAT Wraps (from this site) and was a huge hit!
